Pentru ca imi plac mult morcovii mi s-a parut inedita ideea unei prajituri cu morcovi si nu am stat pe ganduri cand am zarit aceasta reteta in Good Food. Si bine am facut, este pur si simplu dementiala! Desi am miscorat cantitatea de ulei, nu e deloc dietetica, dar eu zic ca ne putem permite din cand in cand un rasfat din acesta :)

Ingrediente (10 portii):

  • 300g faina alba
  • 200g zahar brun nerafinat*
  • 4 oua
  • 150ml ulei vegetal
  • 75g unt topit
  • 200g morcovi rasi
  • 150g stafide
  • 2 lgt praf de copt
  • 2 lgt scortisoara
  • coaja de la 1 portocala bio

Glazura:

  • 2 lgt miere*
  • 2 lgt zahar brun nerafinat*
  • 200g crema de branza

Amestecam faina, scortisoara, praful de copt si zaharul. Batem ouale cu uleiul si coaja rasa de portocala. Adaugam si restul ingredientelor. Turnam compozitia intr-o tava (22cm diametru) tapetata cu hartie de copt si o introducem la cuptor 180 de grade pt aprox 1 ora, pana trece testul scobitorii.

Glazura se face batand bine zaharul, mierea si branza Philadelphia. O intindem pe prajitura dupa ce s-a racit putin. Eu am facut niste moturi haioase si am mai ras putina portocala deasupra :) Pofta mare!

*Baby-friendly: folositi, optional, putin sirop de artar sau miere, avand in vedere faptul ca mierea se ofera copiilor numai dupa varsta de 1 an, cu masura. Iar la glazura folositi doar crema de branza cu putin suc de portocale si scortisoara. Reteta preluata si adaptata de aici.

Because I love carrots I thought the idea of a carrot cake was very interesting, so when I saw this recipe in Good Food magazine I went straight into the kitchen. And it was a smart choice, this cake is just unbelievable! Although I reduces the oil amount, It’s not diet friendly, but I think from time to time we deserve to indulge ourselves in a special dessert like this :)

Ingredients (10 servings):

  • 300 g white flour
  • 200 g unrefined brown sugar
  • 4 eggs
  • 150 ml vegetable oil
  • 75 g melted butter
  • 200 g grated carrots
  • 150 g raisins
  • 2 tsp baking powder
  • 2 tsp cinnamon
  • zest of 1 orange

Frosting:

  • 2 tsp honey
  • 2 tsp unrefined brown sugar
  • 200 g Philadelphia cream cheese

Combine the flour, cinnamon, baking powder and sugar. Beat the eggs with the oil and orange zest. Add the rest of the ingredients. Pour the mixture in a round tray (22 cm diameter) lined with baking paper and put it in the over for about 1 hour (180 C), until a skewer comes out clean.

For the frosting simply whisk the cream cheese with sugar and honey, then spread over the cake once it cooled. I made some funny decorations with the frosting and sprinkled orange zest on top :) Enjoy!
