Spalatul si curatatul urzicilor e o munca indelungata si foarte migaloasa, noroc ca mama stie ca ma dau in vant dupa mancarea de urzici si imi face mereu primavara cand merg pe la ea :) Este o mancare delicioasa, foarte sanatoasa (urzicile sunt surse bogate de vitamine, minerale si aminoacizi), care merge de minune cu oua ochiuri si paine proaspata de casa sau mamaliguta :)

Ingrediente (4 portii):

  • 1 kg urzici
  • 200ml lapte
  • 50g unt
  • 3 catei de usturoi
  • sare dupa gust
  • 4 oua posate (vedeti aici cum)

Spalam bine si curatam urzicile, cu manusi de unica folosinta, pentru a nu ne urzica :) Punem intr-o oala mare apa la fiert cu un praf de sare, iar cand apa incepe sa fierba adaugam urzicile si le oparim aproximativ 10 min. Le scurgem bine (nu aruncam apa, o bem pentru ca este sanatate curata :), le punem la racit, dupa care le tocam marunt. Puteti folosi si blenderul, insa mie imi place sa se pastreze din textura, sa nu iasa chiar piure.

Punem pe foc intr-o tigaie adanca urzicile tocate, laptele, untul, cateii de usturoi tocati si sare dupa gust. Mai adaugam si un pahar din zeama in care au fiert urzicile, lasam pe foc mancarea pana ajunge la consistenta dorita. Servim cu oua posate (adica fierte in apa, va arata aici Jamie Oliver cum se fac) si paine proaspata de casa :) Pofta mare!

ENGLISH VERSION

Washing and picking nettles is such hard work, thank God mom knows I love nettle stew and always cooks it for me when I visit her during springtime :) It’s a delicious, healthy meal (nettles are rich sources of vitamins, minerals and amino acids) that goes perfectly with poached eggs and fresh bread or polenta :)

Ingredients (4 servings):

  • 1 kg fresh nettles
  • 200 ml milk
  • 50 g butter
  • 3 cloves of garlic
  • salt to taste
  • 4 poached eggs (see here how)

Wash well and pick the nettles, using rubber gloves not to hurt your hands :) Bring a large pot of water to a boil, then add the nettles and boil for about 10 min. Drain and let them cool for a while, then chop finely. You can use a blender, but I like to keep some of the texture, I don’t want a too smooth puree.

In a tall pan cook the chopped nettles, milk, butter, chopped cloves of garlic and salt to taste. Add a cup pf the water left from boiling the nettles. Let it all simmer until it reached desired consistency. Serve with poached eggs (see here Jamie Oliver’s instructions) and fresh bread :) Enjoy!
