De cand am inceput sa pot manca din nou legume in sarcina sunt in culmea fericirii :)) Ma saturasem de uscaturi, iar acum profit la maxim si mananc legume cat pot de frecvent, adica la fiecare masa. Aceasta salata de fasole verde si rosii e simpla, foarte gustoasa, avem si proteine din branzica, all good :)

Ingrediente (2 portii):

  • 500g fasole verde
  • 250g rosii cherry
  • 100g branza faramitata: mozarella/ branza de capra
  • 1/2 ceapa rosie taiata rondele
  • 2 lg ulei de masline extravirgin
  • 2 lg otet balsamic
  • 1 legatura de marar
  • sare dupa gust

Mai intai curatam si fierbem fasolea verde cam 5 minute, pana e frageda. Taiem rosiile cherry in jumatate sau in sferturi, in functie de cat de mici sunt, apoi amestecam frumos toate ingredientele, asezonam cu ulei de masline, otet balsamic, sare si savuram. Sa avem pofta!

ENGLISH VERSION

Since I started being able to eat vegetables again this pregnancy I’ve been super happy :)) I had had enough of dry food, so now I take advantage of this to the maximum: I eat vegetables as often as I can, for every meal. This green beans and tomato salad is simple, very tasty, we’ve got protein from the cheese, all’s good :)

Ingredients (2 servings):

  • 500 g green beans
  • 250 g cherry tomatoes
  • 100 g crumbled cheese: mozarella/ goat cheese
  • 1/2 red onion cut into rings
  • 2 tbsp extravirgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 bunch of dill
  • salt to taste

First cut and boil the green beans for about 5 minutes, until tender. Cut the cherry tomatoes in halves or in quarters, depending on their size, then gently combine all the ingredients, season with olive oil, balsamic vinegar and salt to taste. Enjoy!
