Salata mea de pui si quinoa este hranitoare, colorata si vesela, excelenta pentru masa de pranz. Se face repede, iar combinatia de pui si quinoa va va tine de foame cel putin 3-4 ore. Merita sa o incercati :)

Ingrediente (2 portii):

  • 100g quinoa
  • 2 buc piept de pui
  • 1 ardei capia
  • 1 dovlecel mic
  • 2 cepe verzi
  • 50g masline
  • 2 rosii deshidratate
  • 1/2 legatura de patrunjel
  • 1 lg ulei de masline
  • sare, piper
  • felii de lamaie pt servit

Gatim puiul pe gratar, apoi il lasam la racit si il taiem taie fasii subtiri. Fierbem quinoa conform instructiunilor (1 parte quinoa, 2 parti apa, 20 de min). Amestecam bucatile de pui cu quinoa fiarta si legumele tocate, maslinele, rosiile deshidratate, asezonam cu ulei de masline, sare si piper. Pofta mare!

My happy and colorful chicken quinoa salad makes an excellent lunch :) It’s easy to make and the high protein chicken-quinoa combination will keep you full for at least 3-4 hours. It’s worth a try :)

Ingredients (2 servings):

  • 100 g quinoa
  • 2 pieces of chicken breast
  • 1 bell pepper
  • 1 small courgette
  • 2 spring onion
  • 50 g olives
  • 1/2 bunch of parsley
  • 1 tbsp olive oil
  • salt and pepper
  • lemon slices for serving

Grill the chicken breast, then let it cool and slice it. Boil the quinoa according to the instructions on the package (1 part quinoa, 2 parts water, about 20 min). Gently mix the chicken slices with the boiled quinoa, chopped veggies, dried tomatoes, herbs and olives. Season with olive oil, salt and pepper. Enjoy!
