Vara e anotimpul mancarurilor simple, dar foarte gustoase datorita bogatiei de fructe si legume. La mine salata de vinete se numara printre hit-urile verii :)) Imi place la nebunie pe paine integrala prajita si cu rosioare, e o bunatate! Parca vara nu e vara fara ea :)

Ingrediente:

  • 500g vinete coapte pe gratar
  • 4-5 lg ulei de masline
  • 1 ceapa rosie mica
  • sare dupa gust

Decojim vinetele, le scurgem bine si le punem in robotul de bucatarie. In mod traditional ele se freaca intr-un bol cu o lingura de lemn, dar eu ma impac foarte bine cu robotul, face el toata treaba :) Procesam bine, adaugand treptat uleiul de masline si sare, dupa gust. La final incorporam ceapa rosie tocata cat mai marunt. Punem painea la prajit, taiem rosioare proaspete si masa e gata! :)

ENGLISH VERSION

Summer is the season of simple but very tasty meals, thanks to the wide variety of fruit and vegetables. Eggplant dip is for me one of the summer hits :) I totally love it on wholewheat toast, with tomatoes, it’s the best thing ever and it doesn’t feel like summer without it :)

Ingredients:

  • 500 g roasted eggplants
  • 4-5 tbsp olive oil
  • 1 small red onion
  • salt to taste

Peel the eggplants, drain them well and put them in the food processor. Traditionally they are mixed with a wooden spoon in a bowl, but I like using the food processor. Process well,  gradually adding olive oil and salt to taste. In the end fold in the finely chopped onion. Toast the bread, cut some fresh tomatoes and enjoy a quick simple meal :)
