Tortul de mere e un desert spectaculos care e si simplu, si gustos, foarte indragit de multa lume. Pentru ca printre musafirii de ziua mea este si cineva care tine post, am pregatit un tort de mere de post delicios care a avut mare succes! :) La multi ani!

Ingrediente :

Mai intai ungem cu putin ulei o forma de tort cu baza detasabila (22 cm diametru) si o tapetam cu hartie de copt. Hidratam curmalele in apa cat sa le acopere si apoi le blenduim cu putina apa pana obtinem o pasta. Puteti folosi si sirop de curmale cumparat (gasiti aici).

Intindem pasta de curmale pe fundul formei, aceasta va avea rolul caramelului :) Taiem felii merele si le asezam pe fundul formei, peste pasta de curmale. Mixam uleiul si zaharul, vanilia, apa, coaja de portocala si scortisoara. 

Adaugam faina, praful de copt si omogenizam bine totul. Turnam aluatul obtinut peste mere si coacem tortul aprox 45 de min in cuptorul preincalzit la 170C, pana trece testul scobitorii. Scoatem tortul din forma si il rasturnam, astfel incat merele sa fie deasupra, si il lasam sa se raceasca de tot.

In cadrul campaniei “Chef la tine in bucatarie“, am imbracat acest tort in frisca obtinuta din Creme Patisserie Decor, varianta vegana de frisca de la Meggle, gasiti si varianta Creme Patisserie :) Am batut-o spuma cu mixerul pana a fost ferma si lucioasa, apoi am decorat tortul cu ea. Deasupra am presarat nuca macinata, mere si merisoare deshidratate.  Suuuper bun tortul! :)

ENGLISH VERSION 

Apple cake is a very popular desert, both spectacular and simple. Because among my birthday’s guests there was someone vegan, I prepared a delicious vegan apple cake that was such a hit! :) Happy birthday to me!

Ingredients :

  • 3 medium apples (300 g)
  • 300 g plain flour
  • 75 g dates
  • 125 ml vegetable oil
  • 150 g brown unrefined sugar
  • 250 ml sparkling water
  • 1 tsp cinnamon
  • 1/2 tsp vanilla powder
  • grated zest of 1 orange
  • 2 tsp baking powder
  • 500 ml vegan whipping cream

First grease a cake pan with oil and line it with baking paper. Soak the dates in enough water to cover them, then blend them with a little water until you get a paste. You can also use store bought date syrup. 

Spread the date paste on top of the pan, this will be our caramel :) Slice the apple and arrange them over the date paste. Mix the oil, sugar, vanilla, water, orange zest and cinnamon. 

Add the flour, baking powder and mix everything well. Pour the dough over the apples and bake the cake for about 45 min in the preheated oven at 170 C, until a skewer inserted in the center comes out clean. Remove the cake from the pan and flip it with the apple layer on top. Let it cool completely.

Whisk the whipping cream until smooth and stiff, then cover the cake in whipped cream, adding a lot on the top :) Decorate the cake as you wish, I used ground walnuts, dried apple slices and cranberries. Yummy!!!!
