Daca vreti un desert usor si pufos pentru Revelion, you’ve come to the right place :) Incercati acest tort de mere, e aromat si insiropat, contine foarte putina grasime si miere ca indulcitor, e perfect pentru noaptea dintre ani :)

Ingrediente (8 portii):

Mai intai ungem cu putin ulei de cocos o forma de tort cu baza detasabila (18cm diametru) si o tapetam cu hartie de copt. Scoatem cotorul marului si il taiem felii subtiri pe care le asezam frumos pe fundul formei.

Batem ouale spuma cu un praf de sare, adaugam apoi mierea, iaurtul, laptele si uleiul de cocos. Amestecam faina cu un praf de sare, scortisoara, praful de copt si bicarbonatul si adaugam acest amestec putin cate putin in cel lichid, mixand usor. Turnam aluatul obtinut peste mere si coacem tortul aprox 40-50 de min in cuptorul preincalzit la 170C, pana trece testul scobitorii.

Dupa ce s-a racit il scoatem din forma, il intepam cu o scobitoare si turnam siropul obtinut din dizolvarea pe foc a 100ml apa, 1 lingura de miere si una de esenta de rom. Poate fi imbracat in frisca, eu am ales sa torn doar putin sirop de curmale peste :) Pofta mare si la multi ani!

If you’re searching for a light fluffy dessert for New Year’s Eve, you’ve come to the right place :) Try this honey apple cake, it’s tasty and moist, has very little fat and is sweetened by honey, it’s perfect for the last night of the year :)

Ingredients (8 servings):

  • 1 large apple (aprox 300g)
  • 200 g whole purpose white flour
  • 1 tsp cinnamon
  • 1/2 tsp baking powder
  • 1/2 tsp sodium bicarbonate
  • 2 free range eggs
  • 1 tbsp coconut oil
  • 140 g honey
  • 100 g Greek yogurt
  • 100 ml milk
  • syrup: 1 tbsp honey, 1 tbsp rum essence
  • date syrup or whipped cream for the topping

First of all grease with coconut oil a spring-form pan with detachable bottom and line it with baking paper.  Core the apple and slice it thinly, then arrange the slices on the bottom of the pan.

Whisk the eggs with a pinch of salt until light and fluffy, then add the honey, yogurt, milk and coconut oil, gently whisking. Mix the flour with a pinch of salt, cinnamon, baking powder, baking soda, then slowly fold in into the egg mixture. Pour the dough over the  apples and bake for about 40-50 min, until a skewer inserted in the center comes out clean.

After cooling, remove the cake from the pan, poke it with a skewer and pour the syrup all over (made from stirring over low heat the honey, rum essence and 100 ml water). You can coat the cake in whipped cream, I just drizzled some date syrup over it :) Happy New Year! :)
