Cum vine primavara parca simtim o nevoie mai intensa de legume, nu-i asa? Eu una as manca doar salate, dar uneori parca vreau si ceva mai consistent. V-am pregatit o mancare delicioasa de post, foarte satioasa si plina de nutrienti. Ardei umpluti cu legume :)
Ingrediente (4 portii):
- 4 ardei grasi
- 1 cana quinoa fiarta 185g (1/3 cana quinoa uscata 60g)
- 1 cana ciuperci champignon (90g)
- 1 dovlecel zucchini
- 1 conserva de fasole alba (400g)
- 1 ceapa rosie
- 2 catei de usturoi
- 2 lg ulei de masline
- 300ml suc de rosii
- patrunjel tocat si sos de rosii pentru servit
Taiem ardeii pe jumatate si ii curatam de cotor si de seminte. Ii punem intr-o tava tapetata cu hartie de copt si ii coacem 10 min. Tocam ceapa si usturoiul si le calim intr-o tigaie in 2 linguri de ulei de masline, apoi adaugam ciupercile tocate si cubulete de dovlecel, condimentam cu sare si piper dupa gust.
Turnam sucul de rosii iar dupa vreo 15 min adaugam quinoa fiarta si fasolea. Umplem jumatatile de ardei cu acest amestec si le coacem cam 30 de minute, pana se rumenesc frumos. Servim cu patrunjel tocat si sos de rosii. Pofta mare!

In the springtime I think my body feels the need for more vegetables. I could eat only salads, but sometimes I want something more filling. I prepared a wonderful vegan dish, very filling and filled with nutrients. Veggies stuffed bell peppers. Delicious! :)
Ingredients (4 servings):
- 4 bell peppers
- 1 cup boiled quinoa 185g (1/3 cup dry quinoa 60g)
- 1 cup champignon mushrooms 90g
- 1 zucchini
- 1 can white beans (400 g)
- 1 red onion
- 2 cloves of garlic
- 2 tbsp olive oil
- 300 ml tomato juice
- chopped parsley and tomato sauce for serving
Cut the peppers in half and remove their pits and white parts. Place them on a tray lined with baking paper and bake them for about 10 min. Saute the chopped onion and garlic in a pan in 2 tablespoons of olive oil, then add the copped mushrooms and zucchini.
Season with salt and pepper to taste and pour the tomato juice. After 15 min add the boiled quinoa and beans. Fill the pepper halves with this mixture and bake them for about 30 min, until slightly brownish. Serve with tomato sauce and freshly chopped parsley. Enjoy!
