Nu mai e nici un secret ca ador biscuitii :) Mai ales ca mai rontai la ei cand sunt la birou si mi-e pofta de ceva bun. Ca sa evit tentatiile din comert, mi-i prepar eu singura si astfel pot si experimenta cu ce combinatii de arome imi plac :) Biscuiteii acestia cu ghimbir sunt tare gustosi si condimentati, aduc putin cu turta dulce chiar. Fragezi si putin croncati, va vor placea cu siguranta ;)

Ingrediente (20 buc):

  • 1 1/2 cana faina de orez (230g)
  • 2/3 cana xylitol (120g)
  • 3 lg miere
  • 2 oua
  • 2 lg ulei de cocos
  • 1/3 cana ghimbir confiat tocat marunt (40g)
  • 1 lgt praf de copt
  • 1 lgt ghimbir pudra
  • 1 lgt scortisoara
  • 1/2 lgt nucsoara

Batem bine cu mixerul ouale, xylitolul si uleiul de cocos. Adaugam cu o spatula/lingura de lemn si faina amestecata cu praful de copt, condimentele si ghimbirul confiat. Modelam biscuiti: facem niste bilute micute pe care le turtim.

Eu le-am facut si niste semne haioase cu furculita :) Ii coacem cam 20 de minute la foc mediu (170 C) pana se rumenesc putin de tot pe margini. Ii lasam la racit pe un gratar. Pofta mare!

It’s not a secret anymore that I am so into cookies :) Especially that I nibble on them at work, when I crave for a delicious treat. To avoid store bought temptations, I make them myself, this way I can also experiment what combinations of flavors I like :) These ginger cookies are really tasty and spicy, they resemble ginger bread a little. Tender and slightly crunchy, you’ll definitely love them :)

Ingredients (20 pcs):

  • 1 1/2 cup rice flour (230g)
  • 2/3 cup xylitol (120g)
  • 3 tbsp honey
  • 2 eggs
  • 2 tbsp coconut oil
  • 1/3 cup finely chopped candied ginger (40g)
  • 1 tsp baking powder
  • 1 tsp powdered ginger
  • 1 tsp cinnamon
  • 1/2 tsp ground nutmeg

Whisk the eggs with the xylitol, honey and oil. Gently incorporate the flour mixed with baking powder, spices and candied ginger. Shape the cookies: mold small balls that you flatten with your palm. I made some funny designs with a fork :)

Bake them for about 20 min in the medium preheated oven (170 C) until their edges turn slightly crisp and golden. Let them cool on a wire rack. Enjoy!

      Nu stiu ce sa zic, ai putea incerca, dar va iesi putin mai fluid aluatul probabil, sa ai grija… Sa imi zici daca ies buni! :)
