Briosele sunt o gustare perfecta 1. pentru pitici: usor de tinut in manute si papat, 2. pentru mamici: usor de facut si de luat la pachet in geanta cand mergeti in parc :) Am tot vazut pe internet diverse retete de briose cu banane si nuci, iar cum muream de pofta, am conceput si eu varianta mea :) Ilinca a mancat 2 pe nerasuflate, si sa stiti ca a inceput sa fie cam pretentioasa la mancare, spre dispera mea, I tell ya!… :)))

Ingrediente (10 briose):

  • 2 oua
  • 1 banana coapta
  • 40g nuci romanesti
  • 40g faina (2 linguri pline varf)
  • 1 lg miere* (optional)
  • 1/2 lgt praf de copt bio
  • 1 lg unt/ulei de cocos*

Batem ouale intregi spuma cu un praf de sare, pana isi tripleaza volumul, devin spumoase si se deschid mult la culoare. Separat pasam banana si o amestecam cu untul topit si mierea. Amestecam faina, nuca rasnita fin de tot si praful de copt.

Micsoram viteza mixerului la minim si adaugam intai amestecul de banana, apoi pe cel de faina. Puteti incorpora aceste amestecuri si manual, usor cu o spatula, pentru a pastra compozitia aerata si pufoasa.

Impartim aluatul in 10 forme de silicon pentru briose (umplem formele cam jumatate, maxim 2/3) si le coacem cam 20 de min in cuptorul preincalzit la 170C, pana s-au rumenit frumos si trec testul scobitorii. Sunt super bune si hranitoare! Ilincai i-au placut foarte mult, mi-a zis „mami, sa mai faci”, iar BTW, cantitatile sunt usor de dublat :) Enjoy!

*Baby-friendly: pentru copii sub 1 an omiteti mierea si sarea. In caz de intoleranta la lactoza folositi ulei de cocos in loc de unt. Reteta inspirata de Zana Scutecel si Mamamag, 2 bloguri tare dragute si dragi mie :)

Muffins are a perfect snack 1. for kids: easy to grab in tiny hands and eat 2. for moms: quick to make and easy to carry with you in the park. I saw a couple of banana walnut muffins on the social media lately and just had to make my own version :) Ilinca ate 2 of these muffins right after I took them out of the oven and she started to be very picky with you, I tell ya!… :)))

Ingredients (10 muffins):

  • 2 eggs
  • 1 ripe banana
  • 40 g walnuts
  • 40 g flour (2 big tablespoons)
  • 1 tbsp honey (optional)
  • 1/2 tsp organic baking powder
  • 1 tbsp coconut oil/butter*

Beat the eggs until the triple in size, become light and fluffy. Separately mash the banana and mix with the melted butter and honey. Combine the finely ground walnuts, flour and baking powder.

Lower the mixer speed and incorporate slowly the banana mixture, then the flour one. You can also do this manually with a spatula, trying to keep the texture light and fluffy.

Divide the mixture into 10 silicone muffins cases (fill them only by half, maximum 2/3) and bake for 20 min in the preheated oven at 170 C, until a skewer inserted in the center comes out clean. Super delicious and nutritious! Ilinca loved them, she told me I should make some more, P.S. – the quantities are super easy to double. Enjoy!

*Baby-friendly: Skip the salt and honey for babies under 1 year old. Use coconut oil instead of butter for dairy-free version.
