Imi era dor de o briosa pufoasa, dar de cand am nascut am mare grija la ce mananc. Ei bine, aceste briose cu mac si lamaie imi satisfac exigentele :) De savurat fara remuscari langa o cana fierbinte de ceai, in timp ce privim pe geam cum ninge :)

Ingrediente (12 briose):

  • 1, 1/2 cana faina de migdale (170g)
  • 2 lg faina de cocos (14g)
  • 2 lg seminte de mac
  • 1 lgt praf de copt
  • 1/2 lgt bicarbonat de sodiu
  • 1/4 cana sirop de artar (60ml)
  • 1/4 cana zeama de lamaie (60ml)
  • 3 oua
  • 3 lg ulei de cocos
  • coaja rasa de la 1 lamaie

Amestecam intr-un bol ingredientele uscate (primele 5), iar in alt vas le batem cu un tel pe cele umede (ultimele 5). Combinam cele 2 amestecuri si turnam compozitia in 12 forme pentru briose tapetate cu hartiute speciale.

Coacem briosele 15-20 de minute la foc mediu, pana trec testul scobitorii. Le lasam sa se raceasca pe un gratar, apoi le savuram :) Enjoy!

ENGLISH VERSION 

I’ve been missing a fluffy muffin, but since I gave birth I am super careful with what I eat :) Lemon poppy seed muffins. Enjoy without guilt next to a hot cup of tea, while watching the snow outside :)

Ingredients (12 muffins):

  • 1, 1/2 cup almond flour 170g
  • 2 tbsp coconut flour 14g
  • 2 tbsp poppy seeds
  • 1 tsp baking powder
  • 1/2 tsp sodium bicarbonate
  • 1/4 cup maple syrup 60ml
  • 1/4 cup lemon juice 60ml
  • 3 eggs, lightly beaten
  • 3 tbsp coconut oil
  • zest of 1 large lemon

Combine all the dry ingredients (first 5) in a bowl, mix the wet ones (last 5) in another bowl. Pour the wet ingredients into the dry ones and stir well.

Divide the mixture into 12 muffin cases lined with special papers and bake at medium heat for 15-20 min, until a skewer inserted in the center comes out clean. Let them cool on a rack, then dig in! :)
