In weekendurile de vara toata lumea pleaca din localitate si e chiar pacat sa cumparam gustari pentru drum din benzinarii, cand putem face acasa ceva gustos si sanatos :) Aceste briose au fructe si legume in compozitie, fibre de la fulgii de ovaz, o aroma minunata de scortisoara si nu contin zahar :) Mi-nu-na-te!
Ingrediente (20 de briose):
- 250g faina alba
- 100g fulgi de ovaz
- 50g fulgi de cocos
- 1 lgt praf de copt
- 2 lgt scortisoara
- 1/2 lgt bicarbonat de sodiu
- 150g Green Sugar (sau indulcitorul preferat)*
- 3 oua
- 100ml ulei vegetal
- 200ml lapte de migdale
- 1 dovlecel (300g)
- 1 mar verde (150g)
- 2 morcovi (150g)
Amestecam intr-un bol ingredientele uscate (primele 6), iar in alt vas batem ouale cu indulcitorul. Adaugam in vasul cu compozitia lichida: merele, morcovii si dovleceii, toate date pe razatoare, iar dovleceii si scursi bine cu ajutorul unui prosop.
Combinam cele 2 amestecuri, tapetam o tava pentru briose cu hartiute speciale si le umplem cam 2/3 folosind o lingura pentru inghetata. Eu am presarat si cativa fulgi de ovaz deasupra, le ofera un aspect rustic dragut :) Le coacem cam 25-30 de minute la 180C, pana trec testul scobitorii. Le lasam sa se raceasca pe un gratar, apoi le savuram :) Pofta mare!
*Baby-friendly: folositi, optional, putin sirop de artar sau miere, avand in vedere faptul ca mierea se ofera copiilor numai dupa varsta de 1 an, cu masura.
ENGLISH VERSION
In the summertime everyone goes away for the weekend and it’s really such a pity to buy snacks from gas stations when you can make a healthy delicious treat at home :) These muffins have veggies, fruit, fiber from the oatmeal, a wonderful cinnamon flavor and no sugar :) Wonderful!
Ingredients (20 muffins):
- 250 g white flour
- 100 g oatmeal
- 50 g coconut flakes
- 1 tsp baking powder
- 2 tsp cinnamon
- 1/2 tsp sodium bicarbonate
- 150 g stevia erythritol (or favorite sweetener)*
- 3 eggs
- 100 ml vegetable oil
- 200 ml almond milk
- 1 courgette (300 g)
- 1 green apple 150 g)
- 2 carrots (150 g)
Combine the dry ingredients in a bowl (the first 6) and in another one whisk the eggs with the sweetener. In the wet ingredients bowl add the grated: apple, carrots and courgette. Drain the courgette before adding it.
Combine the 2 mixture and spoon the final dough in a muffin pan lined with special baking papers. Fill them only 2/3, the muffins will rise. I sprinkled some more oatmeal on top, it makes them look pretty and rustic :) Bake the muffins at 180 C about 25-30 min, until a skewer inserted in the center comes out clean. Let them cool on a rack, then serve them :) Enjoy!
*Baby friendly option: use 2-3 tbsp honey for sweetening.
