Azi am facut o mancare foarte gustoasa: broccoli gratinat la cuptor, de post. Sosul este unul facut din caju si fulgi de drojdie inactiva, ambele dandu-i o aroma de branza „fake” :)) Se poate face si cu conopida, de exemplu, sau mai multe alte legume fierte, pentru a obtine varianta vegana de legume gratinate la cuptor :)

Ingrediente (2-3 portii):

Fierbem buchetelele de broccoli pana intra furculita in ele, apoi le scurgem si le punem intr-un vas termorezistent; am folosit aceasta craticioara rosie draguta :) si rotunda, cu diametru de 16cm.

Pentru sos punem toate ingredientele in blender: apa, nucile caju, fulgii de drojdie, tahini, ardeiul (pentru gust si culoare), usturoiul, sare si piper. Mixam bine pana obtinem o crema fina pe care o turnam peste broccoli.

Adaugam cascaval vegetal taiat bucatele mici si pesmet, am folosit pesmet Panko, un soi care este mai mare si mai crocant :) Puteti folosi si pesmet normal sau faina de migdale, pentru varianta mai low carb si fara gluten.

Introducem totul la cuptor 30 de minute la 180C, cu ventilatia pornita in ultimele 10 minute, pana se rumeneste frumos acest broccoli gratinat la cuptor de post. Pofta mare!

Today I baked a super yummy vegan dish: broccoli casserole with a sauce made from cashews and nutrition inactive yeast, both of these ingredients give a super cheesy flavor :) You can try this with cauliflower or any other veggie for a vegan vegetable gratin :)

Ingredients (2-3 servings):

  • 450 g broccoli
  • 100 g cashews
  • 1 red pepper
  • 1 garlic clove
  • 1 tbsp tahini (sesame paste)
  • 2 tbsp inactive yeast
  • 200 ml water
  • salt, pepper
  • 3 tbsp Panko breadcrumbs /almond flour*
  • 50 g vegetable melting cheese

Boi the broccoli florets until tender, then drain them and put them in a heat resistant dish, I used this pretty 16 cm diameter pan. For the sauce blend all the ingredients until smooth: cashews, water, yeast flakes, tahini, pepper (for color and taste), garlic, salt and pepper.

Add the vegetable metling cheese cut into small pieces and the breadcrumsb on top. I used Panko breadcrumbs which are more chungy and crunchy, but you can use regular or almonds flour for lower carb and gluten free version.

Bake at 180 C for about 30 min, with the ventilation on in the last 10 minutes until golden and crispy on top. Enjoy!
