Faceam ordine prin calculator cand am gasit aceasta poza si mi-am dat seama ca pe blog nu se regaseste reteta de bruschete cu vinete si mozzarella. Soc si groaza, ce sa mai! :)) Am remediat problema urgent :) Pentru un brunch simplu si bun: bruschete cu vinete si mozzarella. Intre timp am refacut si poza :)

Ingrediente (2 portii):

  • 2 chifle cu seminte*
  • 4 felii de vanata (groase de aprox 5mm)
  • 4 lgt pasta de rosii
  • 2-3 lg de capere
  • 4 felii de mozzarella
  • salata si rosii pentru servit

Gatim pe gratar feliile de vanata aprox 2-3 min pe fiecare parte, pana se rumenesc frumos. Ne apucam de asamblat bruschetele: taiem chiflele in 2, ungem fiecare jumatate cu cate o lingurita de pasta de rosii. Eu am folosit aceste chifle cu seminte de chia.

Adaugam rondele de vinete, bucati de mozarella si deasupra caperele. Introducem bruschetele la cuptor pana se inmoaie mozzarella, cam 5-10 minute. Pofta mare!

I was just browsing through my laptop when I found this photo and I realized the blog doesn’t have the Mozzarella & aubergine bruschetta recipes. Oh, my God! :)) I quickly solved the problem :) For a simple and tasty brunch: Mozzarella & aubergine bruschetta.In the meantime I took a new photo :)

Ingredients (2 servings):

  • 2 seed buns
  • 4 aubergine slices (approx 5mm thick)
  • 4 tsp tomato paste
  • 2-3 tbsp capers
  • 4 slices of mozzarella
  • salad and tomatoes for serving

Grill the aubergine slices approx 2-3 min on each side. Start assembling the bruschettas: cut the buns in 2 (I used these chia seed buns), spread a teaspoon of tomato paste on each half, add the aubergine slices, mozzarella and capers on top. Bake them until the mozzarella melts a little, for about 5-10 min. Enjoy!
