A venit toamna si e minunat cand privesti din casa cum ploua si in cuptor se coace incet ceva bun cu scortisoara :) Azi va propun o delicioasa si aromata budinca de cartof dulce. Parca mai indulceste vremea ploiasa de afara :)

Ingrediente (4-5 portii):

Decojim cartofii dulci si ii taiem cubulete, apoi ii fierbem la aburi timp de 15 min, pana intra o furculita cu usurinta in ei. Ii pasam cu furculita si ii amestecam cu siropul de artar, uleiul de cocos, scortisoara si stafidele.

Punem compozitia intr-o tava micuta (a mea are dimensiunile 24*18cm), asezam deasupra nucile pecan si coacem totul 30 de minute. Servim fierbinte cu extra sirop de artar si fulgi de cocos. Pofta mare!

ENGLISH VERSION

Autumn is here and it’s really great to watch the rain from your cozy home while something delicious with cinnamon is slowly cooking in the oven :) Today I am making a delicious sweet potato casserole. To sweeten the rainy weather outside :)

Ingredients (4-5 servings):

  • 3 medium sweet potatoes
  • 3 tbsp maple syrup (to taste)
  • 1 tbsp coconut oil
  • 1 tsp cinnamon
  • 3 tbsp raisins
  • a handful pecans
  • 1 tbsp coconut flakes for serving

Peel the sweet potatoes and chop them, then steam them for about 15 min until nice and tender. Mash them with a fork and mix them with the maple syrup, coconut oil, cinnamon and raisins.

Put the mixture in a small baking dish (mine has 24*18 cm), place the pecans on top and bake for 30 min. Serve hot with extra maple syrup and coconut flakes. Enjoy!
