Burgerul acesta vegan cu Jackfruit este atat de genial, incat sotul mi-a zis, in timp ce gateam: da’ miroase a friptura, sigur nu ai pus si pui? :)) Jackfruit-ul este un fruct exotic din India care, gatit, seamana enorm la textura si gust cu carnea, fiind asadar perfect pentru perioadele de post sau de ce nu, atunci cand vreti sa luati o pauza de la carne. Ingrediente (4 portii):
- 1 conserva de Jackfruit Clearspring (500g)
- 250ml suc de rosii
- 1 ceapa
- 2 lg ulei de masline
- 1 lg zahar brun nerafinat
- sare, piper
- 4 chifle de burger
- 200g varza alba
- 4 lg maioneza vegana
- 4 lgt ketchup bio
- cartofi copti pentru servit
Mai intai ne ocupam de Jackfruit: il scurgem bine, apoi inlaturam cotorul, partea lemnoasa adica si, folosind degetele, rasfiram usor bucatile. Arata fix ca si carnita de pui taiata fasii :)
Incalzim intr-o tigaie uleiul si calim jumatate de ceapa tocata marunt. Cand e translucida adaugam firisoarele de Jackfruit, sucul de rosii, zaharul brun, sare si piper. Amestecam bine si lasam totul sa se gateasca la foc mic, amestecand constant. Dupa aprox 20 de min, carnea noastra e gata :)
Sos de varza: Amestecam jumatatea de ceapa ramasa tocata marunt cu varza maruntita fin si maioneza. Puteti adauga si un morcov crud, daca doriti :)
Asamblare: Taiem cele 4 chifle in jumatate si adaugam pe fiecare din cele 4 jumatati de jos: cate 1 lingurita de ketchup, varza cu maioneza si compozitia de carne. Asezam celelalte jumatati de chifle deasupra si servim burgerii cu cartofi, eu am copt niste cartofi pai cu ventilatia pornita pana s-au rumenit :) Pofta mare!
ENGLISH VERSION
Ingredients (4 servings):
- 1 canned Clearspring Jackfruit (500g)
- 250 ml tomato juice
- 1 onion
- 2 tbsp olive oil
- 1 tbsp brown unrefined sugar
- salt, pepper
- 4 burger buns
- 200 g white cabbage
- 4 tbsp vegan mayonnaise
- 4 tsp organic ketchup
- baked potatoes for serving
First take care of the Jackfruit: drain it well, remove the woody part and shred with your fingers. It looks just like shredded chicken :)
Heat the oil in a pan and saute the diced onion. When translucent, add the Jackfruit threads, tomato juice brown sugar, salt and pepper. Mix well and cook everything for about 20 min, constantly stirring.
Coleslaw: Mix the remaining diced onion with the chopped cabbage and mayonnaise. You can add a raw carrot, too, if you want :) A
Assembly: Cut the 4 buns into halves and add on each of the lower buns: a teaspoon of ketchup, the coleslaw and the cooked Jackfruit meaty sauce. Top with the upper bun and serve with hot baked potaoes. Enjoy! :)
