De la placinta cu dovleac si aluat fraged, care a avut super succes, intre noi fie vorba :), am ramas cu putin dovleac si am zis ca ce moment poate fi mai bun sa incerc un Pumpkin spice latte? Asa a la Starbucks :) Un super rasfat cald si aromat pentru o dimineata mai racoroasa. P.S. – gasiti paiele dragute reutilizabile eco din poza aici, noi am renuntat la paiele de plastic in favoarea acestora :)

Ingrediente (2 portii):

  • 400ml lapte (de cocos)
  • 3 lg piure de dovleac copt
  • indulcitor dupa gust
  • 1/2 lgt scortisoara
  • 1/4 lgt extract de vanilie
  • 1 praf de piper
  • 150ml espresso tare
  • frisca si scortisoara pentru servit

Punem intr-o craticioara nonaderenta piure de dovleac, condimentele si vanilia si amestecam pe foc bine, sa se intensifice aromele. Adaugam laptele de cocos si tinem pe foc compozitia cateva minute, sa se intrepatrunda bine aromele.

Adaugam indulcitorul, pasam totul cu blenderul vertical si turnam compozitia obtinuta intr-o cana mare. Adaugam cafeaua espresso si servim cu frisca deasupra, eu am folosit frisca de cocos (reteta aici). In your face, Starbucks! :))) Enjoy!

ENGLISH VERSION

I had some leftover pumpkin from the pumpkin shortbread pie, that was a mega hit, between you and me :) So I thought: this is the perfect time to try a Starbucks copycat pumpkin spice latte! A delicious warm treat on a cold morning. :)

Ingredients (2 servings):

  • 400ml coconut milk
  • 3 tbsp roasted pumpkin
  • sweetener to taste
  • 1/2 tsp cinnamon
  • 1/4 tsp vanilla extract
  • 1 pinch of pepper
  • 150 ml strong espresso
  • whipped cream and cinnamon for serving

Put the coconut puree spices and vanilla in a small nonstick saucepan over medium heat and mix well, to get the flavors bursting. Add the coconut milk and simmer for a couple of mins.

Add the sweetener, blend everything with an immersion blender and pour into a large cup. Add the espresso and serve with coconut whipped cream (recipe here) and cinnamon. In your face, Starbucks! :))) Enjoy!
