Ador cartofii dulci, pe langa faptul ca sunt foarte gustosi, contin sodiu, potasiu, fibre, fier, 37% din necesarul zilnic de vitamina A, vitamina E (citeste mai multe aici). Azi mi-am pregatit un mic dejun copios care poate fi servit cu succes si pe post de pranz: cartof dulce cu avocado si oua :)

Ingrediente (2 portii):

  • 1 cartof dulce mediu
  • 1/2 avocado
  • 3 oua de tara
  • 2 lg ulei de masline
  • 200 g rosii cherry
  • 1 ceapa verde
  • 1/2 ceapa rosie
  • 1 ardei gras galben
  • sare, piper

Curatam de coaja cartoful dulce, il taiem cubulete si il coacem cam 20-30 de minute, amestecand cubuletele in tava la jumatatea timpului. Cand sunt suficient de „bronzate”, le scoatem din tava si le punem deoparte :)

Intr-o tigaie incalzim uleiul de masline si rumenim putin ceapa si ardeiul gras, apoi adaugam ouale batute, amestecand frecvent. La final adaugam rosiile taiate in jumatati si cartoful dulce, sare si piper si mai lasam putin pe foc, cam 5 minute pentru a se imbina aromele. Adaugam felii de avocado si ceapa verde tocata si servim imediat. Pofta mare!

ENGLISH VERSION

I love sweet potatoes, besides being so delicious, they also contain sodium, potassium, fiber, iron, 37% of the daily dose of vitamin A, vitamin E. Today I fixed myself a filling breakfast that can also be served for lunch: sweet potato, avocado & egg scramble.

Ingredients (2 servings):

  • 1 medium sweet potato
  • 1/2 avocado
  • 3 free range eggs
  • 2 tbsp olive oil
  • 200 g cherry tomatoes
  • 1 spring onion
  • 1/2 red onion
  • 1 yellow bell pepper
  • salt, pepper

Peel the sweet potato, chop and bake for about 20-30 min, mixing the cubes after 15 min. When brownish enough, take them out of the oven and set aside. Heat the olive oil in a pan and saute the chopped onion and pepper, then add the beaten eggs, constantly stirring. In the end add the sweet potato cubes and let it cook for another 5 min, for the flavors to combine. Add avocado slices and chopped spring onion before serving. Dig in!
