E sezonul capsunilor dulci si parfumate! Sa le exploatam la maxim, pai nu? :) Ce putea fi mai bun decat un cheesecake raw cu capsuni? :) Blat crocant si dulce, crema fina de caju, parfum de capsuni, o nebunie! :D Gustos si sanatos.

Blat:

Crema:

  • 2 cani caju crud (300g, hidratat timp de 2 ore)
  • 2-3 cani capsuni proaspete (400-600g)
  • 1/2 cana crema de cocos (125ml)
  • 5 lg sirop de artar (sau indulcitorul preferat, dupa gust)
  • 3 lg ulei de cocos

Pentru blat: procesam bine de tot alunele de padure pana devin ca o faina, apoi adaugam curmalele fara samburi si uleiul de cocos. Mai procesam pana compozitia este lipicioasa. Tapetam o tava rotunda cu fund detasabil (22cm) cu folie alimentara si presam bine compozitia cu o lingura intr-un strat uniform. O introducem in congelator.

Pentru crema: introducem in robotul de bucatarie capsunele spalate si curatate, mixam sa le facem piure :) Punem si nucile de caju bine scurse, crema de cocos, uleiul de cocos si siropul de artar dupa gust. Turnam crema peste blat si introducem minunatia in congelator. Dupa ce s-a intarit suficient, dar nu chiar beton :) decoram frumos cu capsuni si savuram.

It’s the season of sweet and delicious strawberries! Let’s exploit them to the maximum :D What could be better than a raw strawberry cheesecake? :) Sweet crunchy crust, smooth cashew cream, strawberry perfume, an insanely good desert! :D

Crust:

  • 1 cup soft dates (175g)
  • 1 cup raw hazelnuts (150g)
  • 2 tbsp coconut oil

Filling:

  • 2 cups raw cashew (300g, soaked for 2 hours)
  • 2-3 cups fresh strawberries (400-600g)
  • 1/2 cup coconut cream (125ml)
  • 5 tbsp maple syrup (or favorite sweetener, to taste)
  • 3 tbsp coconut oil

For the crust: process well the hazelnuts into a flour like consistency, then add the dates and coconut oil. Process some more until the mixture is sticky and holds together. Line the bottom of a pan (22 cm) with clingfilm and evenly press the mixture with a spoon.

For the filling: put the strawberries in the food processor and puree them. Add the well drained cashew nuts, coconut cream, coconut oil and maple syrup to taste and process some more until smooth and silky. Pour the cream over the crust and put the cheesecake in the freezer to firm up. When hard enough (but not too much:)  nicely decorate with strawberries and enjoy.

      • Multumesc mult de tot. Am facut si eu transformari dupa cum am gasit pe internet, dar la unele ingrediente, gramajele au iesit diferit. M-am mai lovit de aceasta problema, de aceea am preferat sa cer gramajele direct de la sursa. Multumesc din nou, cred ca il voi face azi ca deliciu pentru ziua indragostitilor. O zi frumoasa!
