Bucataria libaneza este una din cele mai gustoase si sanatoase bucatarii din lume, prin urmare este si preferata mea. Reteta pe care v-o propun azi este o variatiune dupa celebrul Falafel, insa nu prajit in ulei (Doamne fereste! :)) si cu tarate de ovaz in loc de faina alba. Foarte bun si de post ;) Chiftelute de naut si susan la cuptor.

Ingrediente (24 buc):

  • 2 conserve de nau (800g)
  • 2 catei de usturoi
  • 1 ceapa
  • 1 legatura de patrunjel /marar
  • 1 morcov mare, dat pe razatoare
  • 1 lg tahini (pasta de susan)
  • 2 lg ulei de masline
  • 4 lg tarate de ovaz (sau faina de ovaz)
  • 1 lgt boia dulce
  • 80g seminte de susan
  • sare, piper*

Punem in robot toate ingredientele mai putin susanul si taratele, mixam bine pana rezulta o crema. Apoi incorporam taratele de ovaz si amestecam bine cu 1 lingura.

Mai adaugam ulei de masline/tarate daca e cazul pentru a obtine o compozitie destul de groasa si modelam chiftelute pe care le tavalim prin susan si le introducem la cuptor la 170C pentru 30 de minute. Din aceste cantitati ies 24 de buc, dar pot fi foarte usor injumatatite :) Pofta mare!

*Baby-friendly: folositi foarte putina sare doar dupa varsta de 1 an, iar piper cu masura, fiind un condiment puternic si iritant gastric.

ENGLISH VERSION

Lebanese cuisine is one of the tastiest and healthiest in the world, therefore it’s also one of my favorites :) The recipe I present to you today is a variation of the well-known Falafel, but not fried in oil (God forbid! :)) and with oat bran instead of flour. Very good and vegan: baked chickpea and sesame patties ;)

Ingredients (24 pcs):

  • 2 cans of chickpeas (800g)
  • 2 cloves of garlic
  • 1 onion
  • 1 bunch of parsley/dill
  • 1 large grated carrot
  • 1 tbsp tahini (sesame paste)
  • 2 tbsp olive oil
  • 4 tbsp oat bran (or oat flour)
  • 1 tsp sweet paprika
  • 80 g sesame seeds
  • salt, pepper

Put all the ingredients (except sesame and oat bran) in the food processor, process well until smooth. Add the oat bran and gently mix with a spoon.

Add more olive oil/oat bran if needed to get a thick texture, then mold the patties, roll them through sesame seeds and bake at 170C for about 30 min. These quantities make about 24 pcs, but they can be easily split in half :) Enjoy!
