Delicioasa! Pofta mare!

ENGLISH VERSION
Who doesn’t love cherries? I sure adore them, so I looked for a recipe to include them. I never made Clafoutis – a French fruit desert – but it’s been tempting me for a while :)
I changed the original recipe, of course, to make it lighter. And it turned out delicious. A light summer dessert you’ve definitely got to try ;)
Ingredients
- 400 g cherries
- 3 eggs
- 80 g xylitol + 1-2 tbsp for sprinkling on top
- 100 g gluten-free flour (I used rice flour)
- 200 ml skimmed milk
- seeds from 1 vanilla pod
- 1 tbsp butter
- 1 pinch of salt
Wash the cherries, pit them, cut them in half and arrange them on a tray (mine has 22 cm diameter) that’s been greased with butter and lined with baking paper. Place them cut side down.
Beat the eggs with the xylitol, vanilla and one pinch of salt, then gradually add the milk and flour. Like when you’re making pancakes :)
Pour the mixture over the cherries and bake the cake for about 45 min at 180 degrees C, until a toothpick inserted in the center comes out clean. Let the cake cool down a little, then take it out from the tray, turn it upside down and sprinkle xylitol on top. Delicious! Enjoy!
