Daca aveti multe galbenusuri ramase de la vreo reteta si nu stiti ce sa faceti cu ele, iata o idee simpla si gustoasa: crema keto de vanilie, super fina si aromata :) Se mananca goala, cu lingurita, cu topping de fructe, poate fi turnata peste diverse prajituri (cum ar fi aceasta prajitura low carb cu mere) mmmmmmm… :)

Ingrediente:

Punem intr-o craticioara laptele de cocos (trebuie sa fie neaparat gras; *puteti folosi si smantana lichida neindulcita) semintele de la pastaia de vanilie si vanilia. Incalzim totul la foc mic.

Separat batem galbenusurile cu indulcitorul, apoi adaugam putin cate putin din crema fierbinte, calduta de cocos, treptat sa nu facem omleta :) Scoatem pastaia de vanilie si mai tinem crema pe foc mic, amestecand constant sa nu se branzeasca. DACA se intampla asa ceva, o luam de pe foc si o amestecam bine cu blenderul vertical, apoi o punem iar pe foc.

La final incoporam untul si lasam crema la racit la temperatura camerei, apoi in frigider, unde se va mai intari datorita untului. Se toarna in cupe frumoase si se serveste asa. Hint: eu am pus din ea si in forme pentru inghetata :) Pofta mare!

ENGLISH VERSION

If you are left with many egg yolks, here is a great way to use them: keto vanilla custard, smooth and creamy :) You can eat it plain, just like that, with a spoon, with fruit topping or pour it over any cake or dessert you like, mmmm… :)

Ingredients:

  • 5 egg yolks
  • 500 ml full fat coconut milk*
  • 1 vanilla bean
  • 3 tbsp brown erythritol
  • 80 g butter

Put the coconut milk (full fat; *you can also use heavy cream) seeds from the vanilla bean and the bean in a saucepan, bring to a simmer over low heat.

Separately beat the egg yolks with the sweetener, then gradually add from the liquid into the eggs, whisking well, careful not to get scrambled eggs :) IF that happens, quickly blend with an immersion blender, then carry on with the low simmering until it thickens.

In the end add the butter and whisk it in until it fully incorporates. Put in nice cups and place in the fridge to set, thanks to the butter. Hitn: I poured some custard in ice cream molds :) Enjoy!
