Ingrediente (14 buc):
- 200g cartof dulce fiert
- 200g faina integrala
- 2 oua
- 70g unt*
- 250ml lapte*
- 1/2 lgt scortisoara
- 1 lgt praf de copt
- 1/2 lgt bicarbonat de sodiu
- 1/2 lgt extract de vanilie
- 1/2 lgt condimente pt turta dulce (optional)

ENGLISH VERSION
I discovered the most amazing baby&toddler friendly waffles, nutritious, sweet but sugar-free! :) Yes, that is possible, thanks to the amazing sweet potato, which is also packed with vitamins and nutrients. So I took out the waffle maker and got busy making these wonderful sweet potato waffles, loved by Ilinca :)
Ingredients (14 pcs):
- 200 g steamed sweet potato
- 200 g whole wheat flour
- 2 eggs
- 70 g butter*
- 250 ml milk*
- 1/2 tsp cinnamon
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp vanilla extract
- 1/2 tsp gingerbread spice mix (optional)
I used 1 medium-small sweet potato from which I got exactly 200 g after steaming. So: peel the sweet potato, cut it in big chunks and boil or seam it until tender. Preheat the waffle maker 5 min before. Blend all the ingredients until smooth, you’ll get a thick buttermilk like texture.
Spoon the mixture into the waffle make and let it do it’s thing, about 2-3 min, depending on the device and the amount of dough. The waffles are ready when golden and slightly firm to the tough. Repeat until you finish the mixture, I got 14 waffles, but these quantities are super easy to split in half or double. Serve warm with whatever you like, we had them with natural plum jam :) Enjoy!
*Notes: You can use also plain flour or oat flour. In case of lactose intolerance, use vegetable milk and coconut oil instead of butter.
