Gazpacho

Dorind sa sfidez frigul de afara am decis sa prepar o supa rece de vara, pe nume Gazpacho – un fel traditional din Spania de care cu siguranta ati auzit, foarte usor de preparat si plin de vitamine.
Bineinteles ca a trebuit sa imi pun amprenta personala asa ca am inlaturat painea alba din reteta originala si am adaugat Apio, turmeric si seminte de in proaspate rasnite pentru un + la categoria sanatate :)
Excelenta a iesit!

Ingrediente

  • 2 conserve de rosii cuburi
  • 150ml apa plata
  • 1 castravete decojit
  • 1 ardei capia
  • 1 tija de telina Apio
  • 4 catei de usturoi
  • 1 ceapa mare
  • 4 lg ulei de masline
  • 2 lg seminte de in proaspat rasnite
  • 1 lgt turmeric
  • cimbru uscat
  • menta uscata
  • sare, piper

Punem in robot/blender toate ingredientele si mixam biiine de tot, apoi turnam in boluri, presaram menta rupta deasupra si servim cu crakersi Wassa integrali. Sa avem pofta!

ENGLISH VERSION

In an attempt to defy the cold weather outside I decided to make a cold summer soup, named Gazpacho – a traditional Spanish meal you’ve definitely heard of, very easy to make and full of vitamins.
I had to put my personal touch, of course, so I replaced the white bread from the original recipe and added celery, turmeric and freshly ground flax seeds for an extra health benefit :)
It turned out great!

Ingredients

  • 2 cans of tomatoes
  • 150 ml water
  • 1 peeled cucumber
  • 1 red pepper
  • 1 celery stick
  • 4 cloves of garlic
  • 1 large onion
  • 4 tbsp olive oil
  • 2 tbsp freshly ground flax seeds
  • 1 tsp turmeric
  • dried thyme
  • dried mint
  • salt, pepper

Put all the ingredients in the blender/food processor and process really well, then pour the soup in bowls, sprinkle fresh mint leaves and serve with wholegrain crackers. Enjoy!
