Ar fi cazul sa urmeze si niste retete de inghetata, ca a venit vara, nu? :) Azi avem in meniu inghetata de rubarba, foarte acrisoara si racoritoare, e super buna! Eu am pus si niste zmeura strict pentru culoare, sa iasa mai roz, dar e doar optional :) Puteti adauga mai mult indulcitor, dupa cat de dulce o doriti, ea fiind un fruct acru, cam ca visinele :)

Ingrediente:

  • 400g rubarba
  • 80g zmeura (pt culoare)
  • 200ml smantana lichida pt frisca
  • 150g eritritol
  • 1 lgt extract de vanilie

Spalam rubarba, ii taiem capetele si o taiem feliute de aprox 2cm. Punem pe foc intr-o craticioara rubarba, indulcitorul, vanilia, 2-3 linguri de apa si aducem la punctul de fierbere, amestecand constant.

Fierbem amestecul pana rubarba devine moale, apoi pasam totul cu blenderul. Separat batem smantana lichida pentru frisca cu 1 lingura de indulcitor pudra.

Combinam cele 2 amestecuri cu turnam crema fie in forme de inghetata, fie intr-o caserola, pe care o introducem in congelator, fie in masina de inghetata conform instructiunilor acesteia.

Am servit-o cu putina zmeura si gemul de rubarba (reteta aici), mmmmm, o bunatate :) Pofta mare!

ENGLISH VERSION

It’s about time we posted some ice cream recipes around here, right? Summer’s here! Today’s menu features rhubarb ice cream, so refreshing and slighlty sour, super good! I put some rasberries, too, just for the color, you can skip that. And you can add more or less sweetener, depending on the taste, just keep in mind it’s a sour fruit :)

Ingredients:

  • 400 g rhubarb
  • 80 g raspberry (for the color)
  • 200 ml heavy cream
  • 150 g erythritol
  • 1 tsp vanilla extract

Wash the rhubrab, trim its ends and slice into about 2cm pieces. Place in a nonstick pan over medium heat along with the sweetener, vanilla, 2-3 tabps of water and bring to a boil, constantly stirring.

Simmer until softened, then blend everything with an immersion blender. Separately whisk the whipping cream with 1 tbps sweetener.

Combine the 2 mixtures and 1. pour into ice cream molds 2. pour in a rectangular dish and freeze 3. pour into the ice cream maker and prepare according to its instructions. We served it with raspberries and rhubarb berry jam (recipe here). Enjoy!
