ENGLISH VERSION
Let’s cool a little, shall we? :) I don’t think mint ice cream we find in stores has anything to do with the plant! :)) So I am offering you a healthy alternative, that is also delicious: raw mint ice cream. It’s very creamy thanks to the healthy fat in avocado and the combination of mint and chocolate is perfect, I love it :)
Ingredients (4 servings):
- 3 ripe avocados
- 150 g raw cashew
- 2 tbsp unsalted peanut butter
- 4 tbsp maple syrup (or other natural sweetener, to taste)
- one large handful fresh mint leaves
- 1/2 tsp natural mint essence
- the fresh juice of one orange
- 1 cup ice cubes
- 3 tbsp cocoa nibs
Peel and chop the avocados, put them in the food processor with the peanut butter, sweetener, mint leaves, mint essence and orange juice. Process well until you get a smooth cream, then add the ice cubes and pulse a few times, but not too much, so that the ice doesn’t completely melt and we still get an ice cream texture.
Put in the freezer for about 2 hours, then sprinkle cocoa nibs on top, decorate with mint leaves and serve to your loves ones :) Enjoy!
