Mere rase congelate pentru placinta. In fiecare an cand aducem mere de la tara, le prepar in acest fel si le congelez, pentru a avea mereu umplutura pentru celebra placinta cu mere si aluat fraged :) (si in varianta low carb) sau tarta cu mere. Cred ca si voi primiti voi uneori cate o ladita de mere de tara si nu stiti ce sa faceti cu ele. Ei bine, iata varianta pe care am invatat-o de la bunica mea, de umplutura de mere rase congelate pentru placinta.
Ingrediente (pt 1 placinta):
- 2 kg mere
- 4 lg indulcitor Green Sugar (dupa gust)
- 1 lgt scortisoara
- pungi zip sau pungi speciale pt congelator
Decojim merele (optional, le puteti lasa si cu coaja) si le dam pe razatoarea mare. Eu le tai cu o ustensila din aceasta, apoi le dau prin razatoarea electrica (KitchenAid cu accesoriul pt razuit), dar le puteti rade cum va e mai usor, manual la razatoare, la robotul de bucatarie etc.
Punem merele rase intr-o tigaie inalta nonaderenta, adaugam indulcitorul (puteti indulci compozitia cu orice va place, dupa gust) si scortisoara si le calim la foc mediu aprox 20 de min, pana scade zeama si merele se inmoaie. Amestecam din cand in cand. Eu mai pun uneori si putin mix de condimente pentru desert din acesta.
Lasam compozitia la racit, apoi o punem intr-o punga cu zip (sau punguta normala de unica folosinta) si o congelam. Din aprox 2 kg mi-au iesit cam 1.3kg de mere rase, pentru ca au avut si multe parti stricate.
Eu cam atat pun la o placinta, e bine sa calculati in functie de cat de multa umplutura va place voua placinta si de dimensiunile tavii, astfel incat sa congelati intr-o punga fix o portie :) Mi-au iesit 4 pachete din chiuveta plina cu mere pe care o vedeti in poze :))
Pachetul se decongeleaza cu 1 zi inainte, apoi se foloseste ca atare in umplutura pentru placinta: reteta aici. Pofta mare! Mere rase congelate pentru placinta.

Every year when we bring apples from our yard at the countryside, I prepare them this way, to have apple pie filling in my freezer for my famous tender crust apple pie (in low carb version, too). I think you all receive sometimes lots of organic apples and you don’t know what to do with the. Well this is the recipe I learned from my grandmother :)
Ingredients (for 1 pie):
- 2 kg apples
- 4 tbsp Green Sugar sweetener (dupa gust)
- 1 tsp cinnamon
- ziploc bags or freezer bags
Peel the apples (that’s optional, you can leave the peel on if you want to) and grated them. I cute them with an apple slicer and then grate them with the KitchenAid grater attachment, but you can do it anyway you want to, manually or with the food processor.
Place the grated apple in a large nonstick pan, ad the sweetener (you can use any sweetener you like, to taste), cinnamon and cook them over mediuj heat for like 20 min, until the juice reduces and the apples soften. Stir from time time.
I sometimes use a little bit of gingerbread spice mix :) Let the mixture cool and then transfer to ziploc bags or normal freezer bags. From 2 kg of apples I got approx 1.3kg of grated apples, which is how much I normally use for a pie.
Calculate depending of how much filling you like in an apple pie and the size of your pan, so that you freeze exactly 1 batch. I got 4 servings from my apples that filled my kitchen sink, as you can see in the pics :)) Defrost 1 day before, then simply use as apple pie filling: recipe here. Enjoy!
