In general am in permanenta in frigider un borcanel de pesto vegan :) E grozav cu paste, cu cartofi copti, pe crackersi integrali, cu pizza… Bun de tot. Pai nu mai bine sa mi-l prepar eu singurica? Zis si facut :) Eu folosesc o combinatie de busuioc si spanac tanar pentru a obtine o aroma putin mai subtila, dar puteti folosi doar busuioc :)
Ingrediente:
- 30g frunze de busuioc
- 50g frunze de baby spanac
- 120ml ulei de masline
- 35g muguri de pin
- 35g nuci caju
- 30g seminte de canepa (3 lg)
- 2 lg fulgi de drojdie inactiva (optional)
- 1 catel de usturoi
- sare dupa gust
Spalam bine busuiocul si spanacul, apoi le scurgem bine; eu folosesc un uscator pentru salata.
Introducem toate ingredientele in robotul de bucatarie si procesam bine. Si atat :) FYI eu nu fac pesto la blenderul de mare putere (am Vitamix) pentru ca iese prea fin si imi place sa aiba putina consistenta si textura :) Depozitam sosul intr-un borcanel de sticla si turnam putin ulei de masline deasupra. Pofta mare!
ENGLISH VERSION
Most of the time I keep a jar of pesto in the fridge :) It’s great with pasta, bakes potatoes, spread on wholegrain crackers, with pizza… Really yummy. Well then why don’t I make it myself? Done :) I used a combination of basil and baby spinach in order to obtain a more subtle flavor.
Ingredients:
- 30 g fresh basil
- 50 g baby spinach
- 100 ml olive oil
- 35 g pine nuts
- 35 g cashews
- 30 g hemp seeds (3 tbsp)
- 2 tbsp inactive yeast flakes (optional)
- 1 clove of garlic
- salt to taste
Wash really well the basil and spinach, drain them; I use a salad spinner to get all of the water out.
Process all the ingredients in the food processor. And that’s it :) FYI, I never make pesto in my Vitamix because the texture is too smooth, I like it to be a little chunky :) Store the pesto in a glass jar and our a little olive oil on top. Enjoy!
