De multa vreme mi-ati tot cerut sa fac si o reteta de placinta cu mere low carb, asa ca m-am gandit eu ca as putea face o placinta turnata cu blat similar cu pandispanul meu pufos keto (reteta aici), si o umplutura de mere rase, Green Sugar si scortisoara of course. A iesit fantastica, juri ca NU e low carb cand musti dintr-o felie frageda, OMGGG! :) I am so excited, voi face foarte curand si o placinta turnata cu branza dulce :)

Umplutura:

Separam ouale, batem albusurile spuma un praf de sare, iar cand incep sa devina spumoase, adaugam si indulcitorul, mixand in continuare pana obtinem o bezea lucioasa.

Separat amestecam galbenusurile, uleiul de masline si vanilia. Adaugam acest amestec in cel de albusuri usor, cu miscari de sus in jos, pentru a pastra cat mai mult aer in compozitie. Cernem faina de cocos amestecata cu praful de copt, izolatul proteic si faina Szafi si incorporam tot amestecand usor, cu aceleasi miscari.

Turnam jumatate din compozitie intr-o tava micuta (de 20*20 cm, pt o tava mare dublati cantitatile) tapetata cu hartie de copt, coacem cam 15-20 min blatul la 180C pana se incheaga. Pentru umplutura radem merele si le calim cu Green Sugar si scortisoara pana se inmoaie si nu mai lasa zeama, cam 15 min a durat la mine.

Asezam umplutura peste blatul de jos, turnam restul de aluat deasupra si coacem placinta cam 25 de min la 180C, pana trece testul scobitorii. Dupa ce se raceste, o rasturnam si o feliem cu grija. Pofta mare la cea mai buna placinta cu mere low carb! :)

You’ve been asking me for a long time for this low carb apple pie recipe, so I thought I’d use my fluffy keto sponge cake recipe and a filling of grated apples, Green sugar and cinnamon, of course. You CANNOT tell it’s low carb, it’s just so tender and fluffy and tasty, OMG! I am so excited, and I will be making very soon a sweet cheese pie with this dough :)

Cake:

  • 5 eggs
  • 2 tbsp olive oil
  • 60 g powdered Green Sugar
  • 25 g coconut flour
  • 1 tbsp Szafi flour mix (8g)
  • 1 tbsp whey protein isolate (8g)
  • 1/2 tsp baking powder
  • 1 tsp vanilla extract

Filling:

  • 700g apples
  • 5-6 tbsp powdered Green Sugar (to taste)
  • 2 tsp cinnamon
  • powdered Green Sugar, for dusting

Separate the eggs, beat the egg whites with a pinch of salt until they are very foamy, then add the sweetener and beat them until they form stiff peaks, into a nice glossy meringue.

Separately combine the egg yolks, olive oil and vanilla. Add this mixture into the egg whites, slowly, using circular movements. Sift the coconut flour, Szafi flour, isolate and baking powder into the mix.

Pour half of the dough in a small pan (20*20 cm) lined with baking paper and bake for about 15-20 min at 180 C until a little firm. For the filling grate the apples and saute them with sweetener and sweetener until softened and the juice reduces, it took me aprox 15 min.

Add the filling on the cake layer, pour the other half of the dough and bake for about 25 min, until a skewer inserted in the center comes out clean. After it’s cooled, flip and carefully slice. Enjoy the best low carb apple pie! :)

  1. La cate grade copi pri,a parte de aluat? Ce faci cu partea a doua de aluat 15 minute cat se coace prima? O lasi pe masa in bucatarie sau o lasi sa astepte in frigider? Nu se lasa?

    • Buna Carmen, tot la 180C, am uitat sa mentionez. Am tinut in bucatarie cealalta jumatate de aluat, nu s-a lasat. Pupici!
