Cele mai dulci amintiri din copilaria mea sunt prajiturile cu foi si crema. Eram asa bucuroasa cand le facea bunica, imi era doar greu sa astept sa se inmoaie foile de la crema :)) Nu stiu de ce a durat atat pana sa ma incumet sa fac si eu o prajitura cu foi, poate ca mi se pareau prea complicat de facut :) Dar Voila! Prajitura cu miere, smantana si nuci.
Foi:
- 100g unt
- 150g miere
- 1 lgt bicarbonat de sodiu
- 80ml lapte
- 1 ou
- 400-450g faina + extra pt pudrat suprafata
Crema:
- 450g smantana grasa
- 100g crema de branza
- 150g miere
- 200g nuca macinata
- 1 lgt extract de vanilie
Mai intai facem crema: batem cu mixerul mierea, smantana, vanilia si crema de branza. la final adaugam nuca macinata si introducem crema in frigider, cu folie deasupra.
Pentru foi: incalzim intr-o craticioara untul, mierea, oul, laptele si bicarbonatul. Tinem pe foc compozitia amestecand constant cu un tel (cu grija, ca face bule) pana capata o culoare usor aramie. O luam de pe foc si incepem sa adaugam faina, framantand cu o lingura de lemn (sau cu mixerul cu bol, accesoriul pt aluat).
Framantam pana obtinem un aluat omogen maleabil pe care il impartim in 4. Pe o suprafata pudrata cu faina, intindem cu sucitorul foile de dimensiunea unei tavi de aprox 25*35cm si le coacem in cuptorul preincalzit la 170C timp de 8-10 min, pana se rumenesc extrem de putin pe margini. Repetam cu celelalte 3 foi si le lasam pe toate cele 4 sa se raceasca.
Pentru asamblare: in tava in care le-am copt punem folie alimentara, asezam prima foaie si intindem 1/3 din crema. Adaugam alta foaie, inca 1/3 din crema si repetam pana sus :) Invelim prajitura in folie si o introducem la rece minim 5 ore, ideal a 2a zi. Pofta mare!

ENGLISH VERSION
The sweetest memories from my childhood are related to sheet cakes. I was so happy when my grandma would make them, it was just hard to wait until the next day, for the filling to soak the sheets :)) I don’t know why it took so long for me to try this cake, I guess I just thought it was more colimcated :) Voila! Sour cream, honey and walnut cake.
Sheets:
- 100 g butter
- 150 g honey
- 1 tsp baking soda
- 80 ml milk
- 1 egg
- 400-450 g flour + extra for kneading
Filling:
- 450 g full fat sour cream
- 100 g cream cheese
- 150 g honey
- 200 g ground walnuts
- 1 tsp vanilla extract
First make the filling: whisk the honey, sour cream, vanilla and cream cheese with a stand mixer. In the end add the ground walnuts and place the filling in the fridge, with clingfilm on top.
For the sheets: heat the butter, honey, egg, milk and baking soda in a saucepan over medium heat. Cook stirring constantly (and carefully, it will be bubbly) until it reaches caramel color. Turn the gass off and start to add the flour, mixing with a wooden spoon (or stand mixer, hook attachment).
Knad until you get a smooth homogenous dough, divide in 4 pieces. On a surface dusted with flour, roll each dough into a rectangular thin sheet (about 25*35cm, the size of the baking tray). Cook the sheet for about 8-10 min, until very slightly brown on the edges. Repeat with the other 3 seets and let them cool down.
To assemble the cake: use the tray in wich you baked the sheets, line it with clingfilm, add the first sheet and spread 1/3 of the filling. Add another sheet, filling and repeat with the rest. Wrap the cake in clingfilm and place in the fridge for min 5 hours, ideally the next day :) Slice and enjoy!
