Sotul m-a provocat zilele acestea sa incerc sa reproduc prajitura cu migdale de la Ikea, e preferata noastra, mereu o cumparam cand avem drum pe la Ikea :) Si mi-am dat seama ca blatul aduce cu cel de la prajitura Doamna de China, asa ca m-am apucat de treaba. Rezultatul a fost unul pe masura asteptarilor :) Warning, nu e pentru persoanele la dieta :D

Foi:

Crema:

Pentru foi: batem albusurile spuma cu zaharul, adaugam apoi faina de migdale. Impartim compozitia in 3 si intindem 3 cercuri cu diametrul de 18-20cm. Le coacem in cuptorul preincalzit la 170C timp de 12 min, apoi le lasam la racit.

Pentru crema: Batem spuma zaharul cu galbenusurile, fierbem crema la bain-marie (deasupra unui bol cu apa fierbinte) pana se ingroasa, apoi adaugam vanilia, untul si amestecam bine totul. Lasam crema la racit.

Pentru asamblare: Punem pe un platou de tort prima foaie, jumatate din crema, apoi a 2a foaie si cealalta jumatate de crema. Asezam ultima foaie, turnam ciocolata topita deasupra. Puteti presara si migdale macinate, cum doriti. Pofta mare!

ENGLISH VERSION

My husband asked me to make an Ikea almond cake „lookalike”, since it’s our favorite cake form Ikea, we always buy it when we shop there :) Warning, this cake is not for those on a diet :D But it’s totally worth the effort :)

Cake:

  • 6 egg whites
  • 150 g sugar
  • 250 g finely ground almonds

Filling:

  • 6 egg yolks
  • 150 g butter
  • 100 g sugar
  • 1 tsp vanilla extract
  • 100 g milk chocolate (topping)

For the cake: whisk the egg whites and sugar until they form stiff peaks, then fold in the almond meal. Divide the mixture in 3 and form 3 circles of dough on a large tray lined with baking paper. Bake in the preheated oven at 170 C for 12 min, then let them chill.

For the filling: Whisk the sugar and egg yolks until dissolved, then cook the cream over a pot of boiling water (bain-marie) until it thickens. Add the vanilla, butter, give it a good whisk and let it cool down.

To assemble the cake: Put the first cake layer on a platter, spoon half of the filling, place the second layer and then the second half of the filling. Arrange the last cake layer on top, pour melted chocolate and sprinkle more almond meal on top. Enjoy!
