Ingrediente (8 portii):

  • 300g faina de orez
  • 2 lgt praf de copt
  • 1 lgt scortisoara
  • 1/2 lgt pudra de vanilie
  • 1/4 lgt ghimbir pudra
  • 200g pastarnac (cam 4 bucati medii)
  • 4 oua
  • coaja de la 1 portocala
  • 200ml miere
  • 160ml ulei de masline
  • Topping: 200g crema de branza
  • 1 lg miere

ENGLISH VERSION

No, it’s not a typing error, I actually did make a cake with this vegetable! :)) I am into strange cooking combinations, so I thought, as long as there is carrot cake and it’s delicious, why wouldn’t a parsnip one be the same? :) Well, it actually really is tasty and full of flavor :)

Ingredients (8 servings):

  • 300 g rice flour
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1/2 tsp vanilla powder
  • 1/4 tsp powdered ginger
  • 200 g parsnip (about 4 medium pcs)
  • 4 eggs
  • zest of 1 orange
  • 200 ml honey
  • 160 ml olive oil
  • Topping: 200 g cream cheese
  • 1 tbsp honey
  • juice and zest of 1 orange
  • 50 g raw hazelnuts

Mix the dry ingredients: rice flour, baking powder and spices with a pinch of salt. Separately whisk the eggs, add the grated parsnip, honey, olive oil and orange zest. Combine the 2 mixtures, slowly folding in with a spatula. Pour the dough in a round spring form pan (22 cm diameter) and bake at 170 C for about 40 min, until a skewer inserted in the center comes out clean.

For the topping whisk the cream cheese with the orange juice and honey, then spread over the cooled cake. Sprinkle chopped hazelnuts, orange zest, slice and digg in! :)
