Eu am servit puiul cu ceapa verde si ananas proaspat, mi-a placut combinatia dulce si crocanta :) Si am mai turnat putin ketchup deasupra, la mine you can’t go wrong with ketchup :))) Merge foarte bine cu orez, dar si cu o salata verde. Pofta mare!

ENGLISH VERSION

I had some fresh pineapple Ilinca din’t want to eat so I thought I’d make something special out of it, I tried a rather exotic dish: baked chicken pineapple :) Now, I am not a big fan of fruit in savory dishes, I prefer veggie sin desserts, but this baked pineapple chicken is juicy and sweet, kinda delicious :)

Ingredients (4-6 servings):

  • 1 kg chicken legs
  • 1/2 medium pineapple
  • 150 ml sugar free ketchup
  • 75 ml apple cider vinegar
  • 50 ml soy sauce
  • 3 tbsp erythritol
  • 1 piece of ginger, 3 cm thick
  • 1 bell pepper
  • 2 spring onions
  • salt, pepper

Make the marinade form the ketchup, sweetener, soy sauce, vinegar, grated ginger, a little salt and pepper. Evenly coat the chicken legs in this marinade an d place them in the fridge for 2 hours, giving them a sir halfway.

Place the chicken legs in a baking dish, pour the leftover marinade over them, add the chopped pineapple and bell pepper and bake everything for about 40-45 min at 180 C, ventilation on in the last mins, until lovely golden brown.

I served my baked pineapple chicken with spring onions and fresh pineapple, I like the sweet crunchy combination :) And drizzled a little more ketchup on top, for me, you can never go wrong with ketchup :))) Rice or lettuce salad are also great side dishes for this. Enjoy!
