La multi ani, femei si fete minunate! Stiti ca sunteti uimitoare si ca puteti face ORICE, da? :) Azi am zis ca voi sarbatori Ziua Femeii prin odihna, si aproape mi-e iesit, dar tot a trebuit sa pregatesc o reteta :)))) Am pentru voi aceste uimitoare rulouri keto cu mascarpone, sunt ceva DE VIS! Deci.. cine nu are aparatul de facut saratele eu zic ca il poate cere acum cadou de 8 martie :)) La multi ani! (12 rulouri a cate 2g net carbs si 137 cal)
Rulouri (12 buc):
- 1 ou (55g)
- 40g faina de migdale
- 20g ulei de cocos / unt topit
- 20g lapte de migdale
- 30g eritritol
- 1/4 lgt guma xanthan
- 1/2 lgt extract de vanilie
Umplutura:
- 250g mascarpone
- 80g crema de cocos*
- 3 lg eritritol
- 1/2 lgt extract de vanilie
Cantariti toate ingredientele in grame, asa e reteta originala si asa am masurat si eu. Punem intr-un bol toate ingredientele si le mixam bine cu un tel. Compozitia obtinuta e fluida, putin mai groasa ca cea de clatite.
In aparatul de facut saratele/conuri de inghetata preincalzit punem doar cate 1 lingura din compozitie, il inchidem si il lasam sa isi faca treaba timp de aprox 2 min, sau pana vafa obtinuta e rumena.
Cat este calda o rulam repede pe o forma cilindrica (termorezistenta), eu am folosit o ustensila de silicon pentru curatatat usturoi :)) Dar se gasesc in comert tuburi speciale pentru cannoli, ca acestea. Dupa racire, rulourile se intaresc, dar sunt fragile, manevrati-le cu grija.
Pentru crema batem cu mixerul crema de cocos (poate fi inlocuita cu smantana lichida pentru frisca), indulcitorul, branza mascarpone si vanilia. Folosind un pos, umplem cu grija rulourile si le pudram cu indulcitor. Sunt fragede de se TOPESC in gura, iar umplutura e divina! :)

Happy Women’s day, ladies! You know you are amazing and you can do really ANYTHING, right? :) I thought I’d celebrate Women’s day by resting, but then I just had to prepare a special recipe :))) These Keto mascarpone Cannoli are sooo amazing, a dream come true! So who doesn’t have this device should ask for it as an 8th of March present :)) (12 Cannolis – 2g net carbs and 137 cal each)
Cannoli (12 pcs):
- 1 egg (55 g)
- 40 g almond flour
- 20 g coconut oil / melted butter
- 20 g almond milk
- 30 g sweetener
- 1/4 tsp xanthan gum
- 1/2 tsp vanilla extract
Filling:
- 250 g mascarpone
- 80 g coconut cream*
- 3 tbsp sweetener
- 1/2 tsp vanilla extract
First weigh all the ingredients in grams, this is the original recipe and this is how I measured them. Put all the ingredients in a bowl and whisk until smooth, the mixture should be fluid, slightly thicker than crepe dough.
In the preheated cone maker, place 1 tablespoon of the dough in the center, close the lid and let it cook for about 2 min or until the waffle is nice and golden brown. Quickly roll it onto a cannoli tube and let it cool, it will then harden.
For the filing beat the mascarpone cheese, coconut cream (can be replaced with heavy whipping cream), sweetener and vanilla until smooth. Using a piping bag, carefully fill the Cannolis and then dust them with powdered sweeter. They are melt in your mouth tender and the filling is amazing!
