Cartofii dulci au multe beneficii nutritionale: contin vitamina A, ajuta la reglarea glicemiei, contin multe fibre si sunt tare gustosi. Imi place ca ii pot folosi si la dulciuri, remember senzationala Negresa cu cartof dulce? :D  Ei bine, astazi am facut o salata super gustoasa cu cartofi dulci, fasole rosie si ceapa rumenita. Bunna de tot! :)

Ingrediente (2 portii):

  • 2 cartofi dulci
  • 1 conserva de fasole Kidney rosie
  • 1 ceapa rosie
  • 2 lg ulei de masline
  • 1 lg otet balsamic
  • zeama de la 1 lime
  • patrunjel sau coriandru
  • 1/2 legatura chives (sau 1 ceapa verde)
  • sare si piper

Curatam si taiem cubulete cartofii dulci, ii mozolim cu 1 lingura de ulei de masline, sare si piper, ii asezam pe o tava si ii coacem cam 25 de minute, pana intra o furculita cu usurinta in ei. Feliem ceapa o coacem si pe aceasta in ultimele minute in cuptor, pana feliile sunt putin moi si dulci.

Amestecam cartofii dulci cu feliile de ceapa, fasolea boabe si firele de chives tocate marunt. Turnam o lingura de ulei de masline si una de otet balsamic, suc de lime, sare si piper, verdeata si savuram imediat. Pofta mare!

ENGLISH VERSION

Sweet potatoes have so many nutritional benefits: they are a good source of vitamin A, they regulate blood sugar level, have plenty of fiber and are really tasty. I like that fact that I can also use them in desserts, remember the sensational Sweet potato brownie? :D Well, today I made a delicious salad with sweet potatoes, red kidney beans and crisp onion. Sooo good! :)

Ingredients (2 servings):

  • 2 sweet potatoes
  • 1 can of red kidney beans
  • 1 red onion
  • 2 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • juice from 1 lime
  • 1/2 bunch of chives (or 1 spring onion)
  • parsley or coriander
  • salt and pepper

Peel and chop the sweet potatoes, season them with 2 tablespoons of olive oil salt and pepper and bake them for about 25 min, until tender. Slice the onion and bake them as well in the last couple min, until slightly soft and sweet.

Combine the sweet potatoes wedges with onion slices, kidney beans and chopped chives. Add a tablespoon of olive oil and one of balsamic  vinegar, lime juice, salt and pepper, freshly chopped herbs and enjoy right away!
