Ador dovleceii sub orice forma, iar azi am facut o minunata, delicioasa salata de dovlecei masline si oua, foaarte satioasa si gustoasa. A fost gata super repede, e low carb si foaarte hranitoare, what’s not to love? :) O incercati si voi?
Ingrediente (2-3 portii):
- 3 dovlecei medii
- 2 lg ulei de masline
- 2 oua
- 50g masline Kalamata
- 50g rosii uscate
- 30g capere
- 70g telemea sau Feta
- 1/2 ceapa rosie
- cateva fire de marar
- sare, piper
Incingem uleiul de masline intr-o tigaie cat mai incapatoare. Decojim dovleceii, le inlaturam capetele si ii taiem cubulete maricele. Ii rumenim in tigaie pana sunt gatiti, aproape moi (dar nu flescaiti :) si rumeniti.
Amestecam frecvent astfel incat sa se rumeneasca bine pe toate partile. Eu cam 10 minute i-am tinut pe foc, dar depinde de dimensiunea bucatilor.
Tocam grosier rosiile uscate si bine scurse de ulei, tocam mararul si ceapa rosie. Fierbem ouale tari (7-8 minute), apoi asamblam salata.
Punem intr-un bol mare cubuletele de dovlecel, ceapa rosie, mararul, maslinele, caperele, rosiile uscate. Asezonam cu sare si piper si adaugam ouale fierte taiate pe jumatate si cubulete de branza. Nu le-am amestecat si pe acestea, ca sa nu se rupa, am vrut sa arate frumos salata :) Simplu si rapid, pofta mare!
P.S. – Cristina Ionita are o salata orientala cu dovlecel foarte misto in minunata ei carte, Anotimpuri in farfurie, de unde mi-a si venit inspiratia pentru aceasta salata de dovlecei masline si oua :) Poate va place si aceasta salata de dovlecei cu maioneza ;)
ENGLISH VERSION
I LOVE courgettes and zucchinis in all forms, and today I made this amazing salad with courgettes, olives and eggs. SO tasty, yummy, nutritious, low carb, what’s not to love? :) Will you give it a try?
Ingredients (2-3 servings):
- 3 medium courgettes
- 2 tbsp olive oil
- 2 eggs
- 50 g Kalamata olives
- 50 g sun dried tomatoes
- 30 g capers
- 70 g cheese or Feta
- 1/2 red onion
- a few dill threads
- salt, pepper
Heat the olive oil in a large pan, peel and cut the courgettes into medium chunks. Saute the courgettes until cooked but not mushy, and a little browned on all sides. I cooked mine about 10 minutes, but it really depends on the size of the chunks.
Roughly chop the drained sundried tomatoes, chop the red onion and dill. Boil the eggs for 7-8 min, until hard, then assemble the salad.
Put the sauteed courgettes in a bowl, add the onion, dill, capers, olives, sundried tomatoes. Season with salt and pepper, mix, then add the eggs cut in half and cheese cubes. I added them in the end, so that they don’es mash while mixing the salad and it all looks pretty :) Enjoy!
