Dupa sarbatorile de Paste ne simtim greoi, mai ales daca am facut excese, dar legumele ne vin bucuroase in ajutor :) Si cum nu le putem manca asa, chiar goale, am facut o salata de linte si halloumi pe gratar. Halloumi este o branza greceasca absolut delicioasa care e grozava pe gratar, am descoperit-o recent si sunt incantata :)

Ingrediente (2 portii):

  • 250g linte fiarta
  • 250g rosii cherry
  • 2 pumni de ruccola
  • 1/2 ceapa rosie
  • 2 lg ulei de masline
  • 200g halloumi (am gasit o varianta light la Mega Image)

Amestecam lintea scursa si racita cu rosiile cherry taiate in jumatati, frunzele de ruccola si ceapa rosie taiata inele. Feliem branza halloumi si o rumenim putin pe gratar, maxim 2 minute pe fiecare parte pana isi apar urmele acelea apetisante :) E delicioasa! Adaugam bucatile de branza peste legume, asezonam cu ulei de masline, sare si piper si savuram.

After the Easter holidays we often feel heavy, specially if we ate a lot, but luckily veggies are here to help :) And since we can’t eat only greens, I made a lentil and halloumi salad. Halloumi is a Greek type of cheese that’s really delicious grilled, I recently discovered it :)

Ingredients (2 servings):

  • 250 g boiled lentil
  • 250 g cherry tomatoes
  • 2 handfuls of rocket
  • 1/2 red onion
  • 2 tbsp olive oil
  • 200 g light halloumi

Combine the chilled and drained lentils with the tomatoes cut in half, rocket leaves and rings of red onion. Slice the halloumi and grill it 2 min on each side, until those lovely grill marks appear :) It’s delicious! Add the cheese slices over the veggies, season with olive oil, salt and pepper and enjoy.
