Lui Bebe 2 din burtica se pare ca ii plac la nebunie salatele, in fiecare seara imi fac una din rosii, castraveti, ardei, ridichi, salata verde, ceapa verde sau rosie, masline, ulei de masline si mult otet de mere, yummmmm! :) Am incercat zilele acestea o salata de naut si ardei copti, foarte consistenta si gustoasa :) Si se face imediat, rapidissim.
Ingrediente (2 portii):
- 1 conserva de naut (400g)
- 2 ardei copti
- 100g branza*
- un pumn de masline
- 1 ceapa rosie mica
- 3 lg capere
- 1 lgt ulei de masline
- 1 lgt otet din cidru de mere (optional)
- sare
Taiem fasiute ardei copti, noi congelam in fiecare toamna cate 15kg de ardei copti si apoi doar decongelam cate un pachet, la „nevoie” :) Taiem branza cubulete, *puteti folosi orice branza va place: telemea, feta, Tofu, and so on.
Taiem si ceapa si amestecam bine toate ingredientele. Asezonam cu sare, ulei de masline, otet (se poate omite, eu in perioada asta imi pun in orice otet si mustar, lol :))))) Pofta mare!
Daca v-a placut aceasta combinatie, va recomand si humusul cu ardei copti, reteta aici :)

Baby nr. 2 seems to love salads, I make a big one every evening with: tomatoes, cucumbers, peppers, radishes, lettuce, red or spring onions, olives, olive oil and lots of apple cider vinegar, yumm! :)) I also tried a chickpea roasted peppers salad, so nurturing and tasty :) And super quick to make :)
Ingredients (2 servings):
- 1 can of chickpea (400g)
- 2 roasted red peppers
- 100 g cheese*
- a handful of olives
- 1 small red onion
- 3 tbsp capers
- 1 tsp olive oil
- 1 tsp apple vinegar (optional)
- salt
Cut the roasted peppers into strips, we freeze every year 15 kgs and then just take out a small package from the freezer when needed :) Cut the cheese into cubes, you can use any cheese you like: fresh cheese, Feta, tofu, mozzarella etc.
Slice the onion and mix well all the ingredients. Season with salt, olive oil, vinegar (you can skip that, I use vinegar and mustard with everything these days, lol :)))))) Enjoy!
