Am descoperit aceasta reteta pe blogul minunat al lui Andie, pe care il citesc cu mare drag, pentru ca ii ador stilul amuzant si absolut fermecator de a scrie si retetele divine :) Salata ei de oua se face foarte rapid, e satioasa si, pentru mine cel putin, e un mic dejun ideal, alaturi de salata si rosii. Contine si multe proteine, si grasimi sanatoase, un mod ideal de a incepe ziua :)

Ingrediente (2 portii):

  • 3 oua fierte tari
  • 1 avocado copt
  • 2 linguri de maioneza
  • 1 ceapa mica (sau 2 cepe verzi)
  • zeama de la 1/2 lamaie
  • 1 lgt mustar
  • 1/2 lgt piper
  • cateva fire de marar
  • sare dupa gust
  • verdeata si salata pentru servit

Mai intai taiem cubulete ouale. La fel procedam si cu avocado, pe care il stropim cu zeama de lamaie pentru a nu se oxida. Amestecam ouale si avocado-ul cu ceapa tocata, maioneza, mustarul, mararul tocat, sarea si piperul. Servim cu verdeata si salata alaturi. Pofta mare!

ENGLISH VERSION

I discovered this recipe on Andie‘s wonderful blog, oh, she has a such charming funny way of writing, not to mention her divine recipes :) Her egg salad is very fast, filling, to me the perfect breakfast next to tomatoes and salad. It contains lots of protein and healthy fat, a great way to start your day :) It’s a must try!

Ingredients (2 servings):

  • 3 hard boiled eggs
  • 1 ripe avocado
  • 2 tbsp mayonnaise
  • 1 small onion (or 2 spring onions)
  • juice of 1/2 lemon
  • 1 tsp mustard
  • 1/2 tsp pepper
  • a couple of dill threads
  • salt to taste
  • fresh herbs and salad for serving

First chop the eggs. Then do the same with the avocado and sprinkle it with lemon juice to avoid oxidation. Gently mix the eggs and avocado with the chopped onion, mayonnaise, mustard, chopped dill, salt and pepper. Serve with fresh herbs and salad. Enjoy!
