De sarbatori, in afara de cozonac si inca ceva dulce, nu prea gatesc, pentru ca avem familii numeroase si suntem mai mereu plecati prin vizite :) Dar dupa acest „circuit” festiv, ca sa ne repunem pe picioare e nevoie de mancaruri usoare, iar aceasta salata de pui si conopida e la fix: usoara, gustoasa si dietetica :)
Ingrediente (2 portii):
- 1/2 conopida
- 4 pulpe inferioare de pui
- 1/2 punga baby spanac
- 4 ardei copti
- 4 rosii uscate
- 1-2 lg capere
- 1 lgt ulei de masline
- sare, piper
- cateva fire de marar
Gatim carnea de pui, fie in tigaia grill, fie la cuptor. Eu am facut-o in Airfryer in 20 de min :) Fierbem buchetelele de conopida aprox 10-15 min, pana intra furculita usor in ele. Asamblam salata: intr-un bol mare punem spanacul, conopida, fasii de carne de pui, ardei copti tocati, capere, rosii uscate taiate in 4, asezonam cu sare si piper, putin ulei de masline si presaram marar tocat. Pofta mare!
*Baby-friendly: folositi foarte putina sare doar dupa varsta de 1 an, iar piper cu masura, fiind un condiment puternic si iritant gastric..
ENGLISH VERSION
I don’t really cook for Christmas anything except the traditional sweet bread and some other dessert, because we have large families and we’re always visiting for the holidays :) After this culinary „tournament”, we need light meals, and this cauliflower chicken salad is just the right thing: easy, tasty and light :)
Ingredients (2 servings):
- 1/2 cauliflower
- 4 chicken thighs
- 1/2 bag baby spinach
- 4 roasted red peppers
- 4 dried tomatoes
- 1-2 tbsp capers
- 1 tsp olive oil
- salt, pepper
- a few threads of dill
Cook the chicken, either grill it, or roast it. I cooked it in my Airfryer in 20 min :) Boil the cauliflower for 10-15 min, until tender. Assemble the salad: in a large bowl place the: baby spinach, cauliflower florets, chicken strips, chopped roasted peppers, capers, dried tomatoes cut in 4, season everything with salt and pepper, a little olive oil and sprinkle chopped dill on top. Dig in!
