Weekendul acesta gatim ceva usor de tot si super rapid, ca e caldut afara. DAR nu facem rabat de la gust si nutrienti, da? :) Aceasta salata cu cartof dulce si ton e foarte interesanta, dressingul acrisor si castravetii murati se combina perfect cu dulceata naturala a cartofului dulce, care mai vine si cu niste vitamine, A si C, Magneziu, Potasiu, Niacina… :) Si e asa frumos colorata aceasta salata!
Ingrediente (2 portii):
- 1 cartof dulce mediu (300g)
- 2 tije de telina Apio
- 1 ardei rosu
- 1 ceapa rosie mica
- 1 conserva de ton in suc propriu (150g, scurs)
- 3 castraveti murati
- 3 lg maioneza* (de casa, ideal)
- 2 lg zeama de lamaie
- 1 lgt mustar
- sare, piper
Decojim cartoful dulce, il taiem cubulete si le fierbem pana intra usor furculita in ele. Tocam marunt si restul ingredientelor: castravetii murati, telina Apio, ceapa rosie, ardeiul.
Facem dressingul amestecand maioneza (pentru zilele de post cu dezlegare la peste puteti folosi o maioneza vegana din comert sau maioneza de avocado), zeama de lamaie, mustarul, sare si piper. Adaugam dressingul, si tonul scurs peste legume, amestecam bine tot, dar usurel sa nu strivim cartoful dulce. Pofta mare la salata de ton cu cartof dulce!

This weekend we’re cooking something light and easy, because it’s so pleasant outside. But we still want the great taste and nutrients, right? :) This sweet potato tuna salad is so interesting, the slightly sour dressing balances perfectly the sweetness of the sweet potato, which also come with vitamins, A, C, magnesium, niacin, potassium … And just look at all the pretty colors! :)
Ingredients (2 servings):
- 1 medium sweet potato (300 g)
- 2 celery sticks
- 1 red pepper
- 1 small red onion
- 1 can of tuna in brine (150 g, drained)
- 3 pickled cucumbers
- 3 tbsp mayonnaise* (ideally homemade)
- 2 tbsp lemon juice
- 1 tsp mustard
- salt, pepper
Peel the sweet potato and dice it, then boil it until tender. Chop the rest of the ingredients: cucumber, celery, pepper, red onion.
Make the dressing by mixing the mayo, lemon juice, mustard, salt and pepper. Gently combine the drained tuna, dressing and chopped veggies, careful not to mash the sweet potato. Enjoy!
