O salata deosebita si consistenta cu dedicatie speciala celor ce iubesc vinetele :) Salata de vinete la gratar, seminte de pin si branza de capra. Menta si otetul balsamic aduc o nota de prospetime acestui fel de mancare. Daca mai adaugam si felie de paine integrala prajita, masa e gata :) Sanatos, gustos si rapid!

Ingrediente (2 portii):

  • 2 vinete mici
  • 100g branza de capra
  • o mana de seminte de pin
  • 3 lg ulei de masline
  • 3 lg otet balsamic
  • o mana de frunze de menta proaspete
  • sare si piper dupa gust

Taiem vinetele felii si le ungem cu putin ulei de masline, apoi le coacem pe gratarul incins cam 3-4 min pe fiecare parte. Rumenim putin semintele de pin intr-o tigaie.

Asezam feliile de vanata pe 2 farfurii, presaram peste ele seminte de pin, branza faramitata si frunze de menta rupte. Asezonam cu ulei de masline, otet balsamic, sare si piper si servim calda. Pofta mare!

ENGLISH VERSION

A special and nutritious salad dedicated to all those eggplant fans out there :) Grilled eggplant salad with pine nuts and goat cheese. The mint and balsamic vinegar give this dish a touch of freshness. If we add a slice of wholewheat toast, lunch is ready :) Healthy, tasty and fast!

Ingredients (2 servings):

  • 2 small eggplants
  • 100 g goat cheese
  • a handful of pine nuts
  • 3 tbsp olive oil
  • 3 tbsp balsamic vinegar
  • a handful of fresh mint leaves
  • salt and pepper to taste

Slice the eggplants and toss them with olive oil, then grill the slices for about 3-4 min on each side. Toast the pine nuts in a small pan until slightly brownish. Place the eggplant slices on 2 plates, sprinkle pine nuts, crumbled cheese and chopped mint leaves on top. Season with olive oil, balsamic vinegar, salt and pepper and serve warm. Enjoy!
