Salata de vinete si ardei copti. Am pentru voi o salata de toamna/iarna senzational de buna :) Iubitul meu a copt in weekend pe gratar cate 15kg de ardei si 15 kg de vinete, le-a curatat si le-a pus in pungute in congelator, si l-am rugat sa imi pastreze si mie 4 ardei si 2 vinete pentru aceasta salata. Salata pe care presimt ca o voi face foarte des :)) Este suuuuper buna!
Ingrediente (4 portii):
- 4 ardei capia
- 2 vinete
- 1 dovlecel
- 1 ceapa rosie
- 1/2 legatura de patrunjel
- 1 lg otet de mere
- 1 lg ulei de masline
- sare, piper
Coacem ardeii si vinetele dupa metoda dorita: pe plita, pe gratar sau la cuptor (mie ultima varianta nu imi place, neavand gustul acela afumat specific :) Decojim vinetele si ardeii de partea innegrita, apoi ii punem la scurs intr-o sita.
Taiem cubulete vinetele coapte si fasii ardeii copti. Taiem ceapa rondele, tocam patrunjelul.
Decojim dovlecelul si il taiem cubulete ca in imagini, apoi il rumenim intr-o tigaie cu o lingurita de ulei de masline pana se inmoaie putin, nu foarte tare.
Intr-un bol incapator punem legumele tocate: ardeii, vinetele, dovlecelul, patrunjelul, ceapa. Asezonam cu ulei de masline si otet, sare, piper, amestecam si servim salata cum dorim: simpla, pe paine sau ca garnitura. Pofta mare! P.S. – Va recomand si aceasta salata de iarna cu sos de mustar, e ceva divinnnn! :)

I’ve got an amazing salad for you: roasted peppers and eggplant salad, with courgette :) Every autumn, my husband roasts on the barbecue 15 kg of red peppers and 15 kg of eggplants, he peels, portions and freezes them in small food bags. I asked him to save 4 peppers and 2 eggplants for me for this salad, and I have the feeling I will be making this salad A LOT :)) It’s just so super yummy!
Ingredients (4 servings):
- 4 red peppers
- 2 eggplants
- 1 courgette
- 1 red onion
- 1/2 parsley thread
- 1 tbsp apple cider vinegar
- 1 tbsp olive oil
- salt, pepper
Roast the peppers and eggplants as you prefer: on the stove, on the grill or in the oven (I personally don’t like the last version, it doesn’t have the smoke flavor that is so specific :) Peel them from the thin black layer and drain them in a sieve.
Dice the eggplants and cut the roasted peppers into strips. Chop the onion and parsley. Peel the courgette and cut it into cubes, then saute it in a pan with 1 teaspoon of olive oil, until softened and just a little brownish.
Put in a large bowl all of the ingredients: peppers, eggplants, courgette, parsley, onion. Season with vinegar, olive oil, salt and pepper. Mix well and serve right away in any way you like: plain, on bread as appetizer or as side dish. Enjoy!
