Salata de vinete e un fel de mancare de care nu cred ca ma voi satura vreodata. Imi place atat de mult incat in fiecare toamna imi coc la tara pe gratar 10kg, le impart in pungute si le congelez :) Astazi am incercat ceva mai special, am adaugat avocado in loc de maioneza, putin usturoi, tahini si patrunjel :) Super bun, gustos si sanatos!

Ingrediente:

  • 2 vinete medii
  • 1 avocado copt decojit taiat cubulete
  • 3 catei de usturoi
  • 1/2 legatura patrunjel
  • 4 lg ulei de masline
  • 2 lg tahini
  • sucul de la 1/2 lamaie
  • sare si piper dupa gust

Coacem vinetele, le curatam si le scurgem bine, apoi lasam robotul de bucatarie sa faca toata treaba. Sa mai munceasca si altii, nu? :)) Procesam bine de tot, adaugand sare si piper dupa gust.

Cand suntem multumiti de cremozitate, oprim robotul, punem salata de vinete intr-un bol, decoram cum dorim si servim cu paine prajita, crackers, ceva de crantanit acolo :) Eu am papat cu tortilla chips de porumb :) Pofta mare!

ENGLISH VERSION

Roasted eggplant spread is something I don’t think I’ll ever get enough of. I like it so much that in the autumn I roast 10 kg at the countryside, divide them in plastic bags and freeze them :) Today I tried something more special, I added avocado instead of mayonnaise, a little garlic, tahini and parsley :) Super delicious, tasty and healthy!

Ingredients:

  • 2 medium eggplants
  • 1 ripe avocado, peeled and chopped
  • 3 cloves of garlic
  • 1/2  bunch of parsley
  • 4 tbsp olive oil
  • 2 tbsp tahini
  • juice of 1/2 lemon
  • salt and pepper to taste

Roast the eggplants, peel and drain them and then let the food processor do all the work. We should have others working for us, right? :)) Process well, adding salt and paper to taste.

When the spread is creamy enough, stop the machine, put the spread in a bowl, decorate as you wish and serve with toast, crackers, something crunchy :) I enjoyed my dip with corn tortilla chips :) Enjoy!

    • Draga Larisa, „copt” aici nu se refera la modul de preparare, ci cat de copt/moale/bine facut este avocado, ca si fruct :) O zi frumoasa!
