O salata cu multe legume, paste si arome de vara: salata mediteraneana de cuscus, cu pastele Arnos. Indiferent ca o serviti la pranz sau cina, aceasta salata e gata super repede, colorata, gustoasa si hranitoare, mi-a placut la nebunie. Si mi se pare o reteta foarte usoara si hranitoare :) Mai multe retete cu pastele Arnos gasiti pe canalul lor de Youtube aici.

Ingrediente (3-4 portii):

  • 125g cuscus Arnos
  • 150g rosii cherry
  • 1 castravete
  • 1 ardei capia rosu, 1 ardei mic galben
  • 1 tija de telina Apio
  • 150g naut (din conserva)
  • 1/2 ceapa rosie
  • 60g masline
  • 100g branza Feta(telemea sau Tofu)
  • 2 lg ulei de masline
  • 1/2 lgt sare
  • cateva fire de patrunjel
  • 1/2 lgt oregano uscat
  • 1 lg otet din cidru de mere

Punem 400ml de apa la fiert, cand clocoteste adaugam cuscusul Arnos (125g, adica jumatate de punga) si fierbem la foc mic cam 6 minute, apoi oprim focul si lasam pastele sa se umfle. Intre timp tocam legumele: rosiile, castravetele, ardeii, ceapa rosie, telina, patrunjelul.

Taiem cubulete branza Feta (merge si cu telemea sau chiar Tofu), scurgem bine nautul din conserva. Pentru dressing amestecam zeama de lamaie, otetul, sare, piper si oregano. Intr-un bol maaaare amestecam toate ingredientele: legumele, pastele cuscus racite, branza, maslinele, nautul, dressingul.

Servim salata imediat, dar e buna si mai tarziu, dupa ce se imbina si mai bine aromele :) Iese un bol foarte mare plin cu salata, asa ca am estimat cam 3-4 portii :) Pofta mare!

ENGLISH VERSION

A hearty salad with lots of veggies, pasta and summer flavors: mediterranean couscous salad. No matter if you serve it for lunch or dinner, this salad is super easy to make, colorful, tasty and nutritious, I loved it :)

Ingredients (3-4 servings):

  • 125 g Arnos couscous
  • 150 g cherry tomatoes
  • 1 cucumber
  • 1 red pepper, 1 yellow pepper
  • 1 celery stick
  • 150 g chickpeas (canned)
  • 1/2 red onion
  • 60 g olives
  • 100g Feta cheese*(or Tofu)
  • 2 tbsp olive oil
  • 1/2 tsp salt
  • a few parsley threads
  • 1/2 tsp dry oregano
  • 1 tbsp apple cider vinegar

Bring to a boil 400ml water, then add the couscous (125g, that is half a package) and simmer for about 6 min, then turn off the gas and let the pasta fullf uo. In the meantime, chop the veggies: tomatoes, cucumber, peppers, onion, celery, parsley.

Dice the Feta (or other cheese, even Tofu), drain well the canned chickpeas. For the dressing mix the olive oil, vinegar, lemon juice, salt, pepper, oregano. In a very large bowl combine all the ingredients and serve right away, or later, because the flavor combine nicely in the fridge :) Enjoy!
