Tot citeam pe siteurile low carb si keto despre aluatul fathead, cu mozzarella si eram tare curioasa, asa ca azi l-am incercat :) E super misto, maleabil si flexibil, am facut din el niste super saratele keto cu mozzarella absolut dementiale si sanatoase! :) Am pastrat o parte din aluat pentru o mini pizza pe care Ilinca a savurat-o cu pofta, asa ca vor mai urma cu siguranta multe retete cu acest magic aluat fathead :D

Ingrediente (1 tava mare):

  • 175g mozzarella
  • 100g faina de migdale
  • 50g crema de branza
  • 1 ou
  • 1 lgt praf de copt
  • 1 lgt guma xantan (gasiti aici)

Folositi branza mozzarella mai tare, nu din aceea proaspata. Dam pe razatoare branza si o incalzim intr-o cratita cu fund non-aderent pana se topeste, amestecand mereu. In majoritatea retetelor de fathead topirea se face la microunde, eu nu am asa ceva :)

Adaugam apoi oul si crema de branza, amestecam bine cu o furculita sau o spatula. Adaugam si faina de migdale, praful de copt si guma xanthan si omogenizam bine tot, framantand pana obtinem o bila de aluat. O transferam pe un blat de lucru si o intindem cu sucitorul intre 2 hartii de copt.

Decupam saratelele dupa formele dorite, le intepam cu furculita si le coacem cam 15 min la 180C, pana se rumenesc frumos, cu ochii pe ele sa nu se arda :) Geniale!

I’ve been reading about fathead dough for a really long time and today I tried my first :) It’s amazing, so easy to mold and flexible, I made the most delicious keto mozzarella crackers, addictive and healthy! :) I saved a small part of the dough and mad a mini pizza for Ilinca. She really loved it so there will be more fat dough recipes on my blog for sure :)

Ingredients (1 large tray):

  • 175 g mozzarella
  • 100 g almond flour
  • 50 g cream cheese
  • 1 egg
  • 1 tsp baking powder
  • 1 tsp xanthan gum

Use a hard mozzarella cheese, not the fresh one. Grate it and heat it in a nonstick saucepan until fluid. Normally you do this with a microwave, but I don’t own one :)

Add the egg and cream cheese, mix well with a fork or spatula. Add the almond flour, xanthan and baking powder and knead until a boll of dough forms. Transfer to a surface and roll between 2 sheets of baking paper.

Cut out the desired crackers shapes, poke them with a fork and bake them at 180 C, until crispy, keeping a close eye on them, not to burn :) Dig in!
