Pofta mare! :)

ENGLISH VERSION

After the heavy Christmas meals, we really are in need of a „green” dish :) And since Ilinca loves broccoli (me happy & proud mommy :) I made an excellent cream of broccoli soup, we both ate it with fresh homemade bread. We couldn’t get daddy to join us, though :))

Ingredients (4-6 servings):

  • 1 broccoli floret (450g)
  • 2 carrots
  • 1 large potato
  • 1 celeriac piece
  • 1 onion
  • 2 cloves of garlic
  • 1 tbsp olive oil
  • 1 tbsp inactive yeast flakes (optional, for a cheesy flavor)
  • 1 tbsp dry veggies mix
  • salt and pepper to taste

Place the broccoli florets, chopped carrots, potato, onion and garlic in a large pot with water over medium heat. After the veggies are boiled (check them with a fork), give them a rinse in cold water and blend them along with: salt, pepper, yeast flakes, olive oil and some of the water the boiled in, depending on the desired consistency. I like thick cream soups :) Blend everything well and you’re done :) Enjoy!
