Supa de rosii / Tomato soup

Nu trece zi fara sa mananc o rosie, va jur :) Imi plac foarte foarte mult aceste legume (fructe de fapt, daca nu stiati :), iar aceasta supa crema de rosii cu busuioc si menta este atat de buna si aromata incat va va cuceri pe loc, I promise.

Ingrediente:

  • 1 conserva de rosii
  • 4 rosii mari
  • 2 morcovi
  • 2 cepe
  • 2 tije de telina Apio
  • 2 catei de usturoi
  • 2 cuburi de legume pentru supa
  • 1 pahar mic de smantana vegetala
  • ulei de masline
  • frunze de busuioc si menta
  • sare de Himalaya, piper

Tocam morcovii, ceapa, telina si cateii de usturoi. Calim legumele in ulei de masline cam 10 min, apoi adaugam supa de legume (apa fierbinte + cele 2 cuburi), conserva si rosiile taiate cuburi. Dupa ce supa incepe sa fiarba mai lasam 10 min pe foc.

Apoi adaugam sare, piper, frunzele de busuioc si menta rupte cu mana, smantana si pasam cu blenderul vertical. Punem si cate o frunza de busuioc fiecare castronel, artistic, ashea :) Si servim neaparat (!) cu o felie de paine proaspata de casa. Mor de pofta aici…. :) Enjoy!

*Baby-friendly: folositi foarte putina sare doar dupa varsta de 1 an, iar piper cu masura, fiind un condiment puternic si iritant gastric. Caliti legumele la foc iute in putina apa. Reteta preluata si adaptata de la Jamie

ENGLISH VERSION

Not a day goes by without me eating one tomato, I swear :)  I absolutely love these vegetables (actually fruit, if you did not know :), and this cream of tomato soup with mint and basil is so good and flavored that it will make you fall in love, I promise.

Ingredients:

  • 1 can of diced tomatoes
  • 4 large tomatoes
  • 2 carrots
  • 2 onions
  • 2 celery sticks
  • 2 cloves of garlic
  • 2 organic vegetable stock cubes
  • 1 small glass of vegetable sour cream
  • olive oil
  • mint and basil leaves
  • Himalayan salt, pepper

Chops the carrots, onions, celery and garlic cloves. Saute them in olive oil for about 10 min, then add the vegetable stock (stock cubes and hot water), can of tomatoes, chopped tomatoes.

After the soup starts to boil, let it 10 min, then add salt, pepper, torn basil and mint leaves, cream and puree everything with the vertical blender.  Put a leaf of basil in every bowl, for the artistic effect :) And serve with hot homemade bread. Divine… :) Enjoy!
