Pe vremea aceasta friguroasa de iarna simt nevoia de mancaruri calde si consistente, asa ca azi am facut o supa dementiala cu muulte legume, naut si kale. Cu o chifla de paine pufoasa de casa (reteta aici), un bol din aceasta supa de kale si naut reprezinta o masa completa, satioasa si foarte gustoasa, care ne incalzeste pe loc :)
Ingrediente (4 portii):
- 1 conserva de naut bio
- 1 morcov
- 1 pastarnac
- 1 ceapa rosie
- 2 tije de telina Apio
- 1/2 conserva rosii cubulete (sau 2 rosii mari)
- 1 lg ulei de masline
- 1 cub de supa bio
- 1/2 legatura de varza kale
- sare si piper dupa gust
Incalzim uleiul de masline intr-o cratita si calim morcovul, ceapa si pastarnacul tocate marunt pana se inmoaie putin. Adaugam apa (aprox 1.5-2L) si lasam supa la fiert pana legumele sunt moi.
Adaugam nautul scurs (pastrati zeama de la naut pentru bezelele din cartea mea :), varza kale, telina si rosiile toate tocate, asezonam cu sare, piper, cubul de supa si mai lasam supa 5 min pe foc. O servim calda, cu paine proaspata de casa :) Pofta mare!
ENGLISH VERSION
On this cold winter weather I feel the need of dense warm filing dishes, so today I made this amazing soup with plenty of veggies, chickpeas and kale. With a loaf of homemade bread, a bowl of this warm chickpea kale soup makes a whole meal, nutritious and very tasty, that will warm you up right away :)
Ingredients (4 servings):
- 1 can of organic chickpeas
- 1 carrot
- 1 parsnip
- 1 red onion
- 2 celery sticks
- 1/2 can diced tomatoes (or 2 tomatoes)
- 1 tbsp olive oil
- 1 vegetable stock cube
- 1/2 bunch of kale
- salt and pepper to taste
Heat the olive oil in a pan and saute the diced carrot, onion and parsley until soft. Add water (1.5 – 2 L) and simmer until the veggies are soft.
Add the drained chickpeas (keep the liquid for these meringues :), chopped kale, celery, tomatoes, season with salt, pepper and vegetable stock cube. Let the soup cook for 5 more min, then serve warm. Enjoy!
