De cand am reinceput serviciul si ne pregatim sa ne mutam „la tara” aka casa la curte, timpul meu liber tinde catre 0, reusesc one in a long while sa mai fac si cate un desert :))) O tarta dulce acrisoara cu lamaie este un desert perfect vara, chiar daca trebuie sa aprindeti cuptorul, sa stiti ca merita :) Nu are zahar, e racoritoare si minunata!

Aluat:

  • 300g faina alba
  • 150g unt
  • 50ml apa rece
  • 1 galbenus
  • 50g Green Sugar (sau indulcitorul preferat)

Umplutura:

  • 150g Green Sugar (sau indulcitorul preferat)
  • 5 oua
  • sucul si coaja de la 4 lamai bio
  • 200ml smantana lichida*

Pentru aluat amestecam bine untul taiat cubulete la temperatura camerei, faina, indulcitorul apa rece, galbenusul si un praf de sare pana obtinem un aluat faramicios pe care il modelam intr-o bila. O invelim in folie si o introducem in frigider 10 min. Pentru umplutura amestecam bine toate ingredientele cu un tel.

Ungem cu unt si tapetam cu hartie de copt o forma pentru tarta (28cm diametru). Intindem aluatul uniform in ea, il intepam putin cu furculita, asezam un disc de hartie de copt si boabe de fasole deasupra (sau bile ceramice pentru copt) si il coacem 15 min in cuptorul preincalzit la 170C.

Scoatem hartia de copt si boabele, apoi turnam crema de lamaie si mai coacem tarta inca 30 de min. Trebuie lasata sa se raceasca inainte de servire, dar e senzationala! :)

*Smantana lichida fara caragenan am gasit pana acum doar aceste 3 sortimente: Laptaria cu Caimac, Sanlacta, Artesana si Ken Nata (cu 35% sau 38% grasime, se cumpara doar online). Smantana fara caragenan trebuie batuta cu putina zeama de lamaie, pentru a se intari, fiind naturala. Daca ati mai descoperit vreun alt brand, dati-mi de stire :)

ENGLISH VERSION

Since I returned to work and we are getting ready to move to the countryside aka house with a yard, my free time is almost none, but I manage to make something sweet once in a looong time :)) This lemon tart is perfect for summertime, even if you have to bake it, it’s so worth it :) Sugar-free and so refreshing, it’s wonderful!

Crust:

  • 300 g all purpose flour
  • 150 g butter
  • 50 ml cold water
  • 1 egg yolk
  • 50g erithriol stevia (or favorite sweetener)

Filling:

  • 150 g erithritol stevia (or favorite sweetener)
  • 5 free range eggs
  • juice and zest from 4 organic lemons
  • 200 ml heavy cream

For the dough mix all the ingredients with a pinch of salt until you form a smooth dough. Roll it into a ball, wrap in clingfilm and place in the fridge for 10 min. For the filling just whisk well all the ingredients.

Grease a tart pan (28 cm diameter) with butter and line it with baking paper. Press the dough into the pan, place a round sheet of baking paper on top and baking beans in the center. Bake the crust for 15 min in the preheated oven at 170 C, then remove the baking paper and beans, pour the filling and bake the tart for 30 more minutes. Let it chill before slicing. Enjoy!
